Baked Falafel

Perfect! I made them as written except I doubled the recipe and skipped the stove-top step. I scooped them out onto a lightly oiled baking pan and baked them about 15 minutes. They held together beautifully and taste wonderful on a warm pita. Thanks for sharing!

Emily's Chipotle Chili

I was really hoping this would be fantastic, but it left something to be desired for me. I love the smokiness of the chipotle peppers, but I found the overall taste to be flat. It lacked the richness I was looking for. My hunt for the perfect chili continues... Edited to Add: I found that adding a touch of butter gives this chili enough of a boost to bump it to 4 stars.

Old-Fashioned Chocolate Fudge

Tastes good, maybe a touch too sweet. Takes practice, that's for sure. I would recommend a candy thermometer (and checking to see that it's accurate). I over boiled mine and it's a hard and powdery mess but the fault lies with me, not the recipe. Also, make sure you use a saucepan that's LARGER than 2 quarts! It expands a ton when boiling!!

Antipasto Pasta Salad

This is my "go-to" pasta salad recipe...everyone loves it! I usually fill it with the asiago cheese, pepperoni, olives and roasted red peppers. Always prepare the dressing as written. Delicious!!

Raspberry White Chocolate Mousse

Awesome and so easy! I used a couple of tablespoons of the sauce when making the mousse to make it a little more raspberry flavored. I served mine in wonton cups I had brushed with butter, sprinkled with sugar and baked in mini-muffin tins until golden brown. I garnished with a drizzle of the sauce and shaved white chocolate. They were a hit at our tea party.

Grilled Mediterranean Vegetable Sandwich

Really yummy and filling! I did modify slightly by making a pesto mayonnaise (equal parts pesto and mayo), and I sliced a sweet onion and roasted it with the eggplant. Also used jarred roasted red peppers for convenience. After reading other reviews I was sure to dry all the vegetables before layering in the sandwich and it turned out great. I wasn't thrilled with the texture of the eggplant so I might leave it out next time. Overall flavor was delicious.

Tomato-Cream Sauce for Pasta

A yummy, fresh tomato-basil sauce. The chunky texture was nice. I did double the sauce so 2 cans of tomatoes, 1 cup fat free half-and-half, 1 tbsp basil, 1 tsp oregano, 1 tbsp sugar, s & p to taste, spoonful of heart healthy "butter" spread. I stirred in 1 box of whole wheat penne that was just shy of al dente so that soaked up any extra liquid. Topped with a little fresh basil. Yummy and healthy!

Spicy Black Bean Cakes

OMG!! Sooo good! I didn't have green onions so I used diced red onion instead, and I followed other reviewers and microwaved the sweet potato before adding it to the mixture. If you want them spicy then add more jalapenos or use a spicier pepper. I added to the sauce making it with a full cup of reduced fat sour cream, zest of one lime, juice of 1/2 a lime, 1 minced jalapeno and a handful of chopped cilantro. Even my 2 and 4 year olds loved this recipe!

Smoky Four Cheese Macaroni Bake

This recipe was only ok for me, but my husband loved it so it got 4 stars. I really liked the addition of the liquid smoke. The texture left a little to be desired for me, a little too thick. Worth a shot if you are looking for something a little different.

Indian Tandoori Chicken

I thought this recipe was pretty good, my husband adored it! I used tandoori masala instead of garam masala and didn't use food coloring but otherwise I made it as listed. I would like the marinade to be a little smoother, will try grating ingredients next time or use the food processor.

Thai Chicken Burgers

Yummy!! I only made a couple of changes to the original recipe. First of all I halved the recipe. I used ground turkey instead of the chicken because that's what I keep on hand. I used fresh bread crumbs instead of the panko (when I think panko I think crunchy coating, not burger filler). I didn't use quite enough though (1 slice), my burgers didn't hold together very well. I used 2 garlic cloves, stuck with 2 tbsp each of green onions and parsley and used 1 tablespoon thai chili sauce in place of the hot sauce. All other ingredients were halved. Lots of great flavor, and not really spicy. I was concerned about using all mayo for the sauce and didn't have any sour cream so I used 3 parts mayo to 1 part coconut milk and added the mint and coconut as directed. It turned out great! I pan fried about 6 minutes per side over med-high heat. Great recipe, thanks!!

Easy Indian Butter Chicken

I've never had authentic Indian Butter Chicken, but this is so yummy! I couldn't find tandoori masala so I made my own. For the recipe, check out my profile. Didn't alter anything in the recipe, perfect as it. Beware though, it's addictive!!

Chicken In Basil Cream

YUM!! The only change I made to the recipe was to leave the chicken unbreaded simply because I didn't have any breadcrumbs on hand. I served with mashed potatoes and there was plenty of sauce to top them as well. Can't wait to eat it again!

Chicken Breasts Stuffed with Perfection

Great chicken, lots of flavor! I altered orginal recipe slightly for simplicity. I'm not a big fan of spinach so I used half a package of frozen chopped spinach, thawed and squeezed dry. Instead of making my own breadcrumbs I used Panko (gives a nice texture), mixed with the Parmesan and thyme. I mixed in 1 tablespoon of melted butter to the breadcrumbs to increase toasting. I used baby bella mushrooms and just rough chopped them and cooked with the green onions until both were tender, I added the garlic after removing the pan from the heat so it didn't become bitter. I butterflied the chicken breasts and pounded them thin; stuffed with a large scoop of the filling and folded over...no need to roll the chicken and toothpick. Restaurant quality!!
