World's Best Lasagna

I love this recipe. It is my favorite sauce. It makes a lot which is great. I usually make 1 lasagne and at the same time cook some other form of pasta and make mini entrees for freeze for my toddler - for a quick lunch on the weekends! Some people have complained about the salt but I think it is fine. Salt is required in cooking to bring out the flavour and adding it after the fact isn't the same (to me anyway). This recipe is definitely a lot of work but well worth it. And don't leave out the fennel! It gives a nice flavour I wouldn't have expected. I put it in my slow cooker for a couple of hours and it turns out great. Thanks for this - my go to recipe!

Fluffy Pancakes

Great recipe! I have stopped buying boxed mixes as I want to eat more chemical free food but have had difficulty getting fluffy pancakes. My son loved these!!

Cinnamon Belgian Waffles

My son asked for waffles this morning and since it is a holiday I had no excuses to offer! I found this recipe and it was great! The waffles were very fluffy and has a nice flavour. Not too sweet or too bland (which is my problem with most waffles). I had to use soured milk and I did increase the cinnamon slightly (about a 1/4 teaspoon instead of a pinch). This recipe does take a bit of time, but well worth it. This is my new go-to waffle recipe!

Spiced Banana Bread

This is my go to banana muffin recipe. I don't like banana myself, but my husband and 5 year old love these. I substitute 1/2 cup hemp protein for 1/2 cup flour and my son doesn't notice the difference but it increases the protein. I give him these and fruit for quick breakfasts and don't feel guilty!

Rainbow Cupcakes

I made these for my son's class on his birthday. They were a big hit. I did find the batter very thick after adding the food colouring. It was difficult to spoon into the cups so I ended up piping it and then had to smooth it out each layer with a wet spoon. This recipe is time consuming but the effect is great. I was able to squeeze 26 cupcakes out of the batter. I would suggest using paste type colouring as the liquid stuff does not give the brightest colours.

I really like this recipe. It is simple, easy for weeknights and taste great. Instead of using water, I use chicken stock for the liquid. I reduce the amount of liquid a bit because the rice can sometimes be soggy. And depending on what kind of pork chops you use, you might need to reduce the cooking time. Overall, a great weeknight recipe that everyone loves.

Red Lentil Curry

I like this but it's not my favourite red lentil curry. It is not specific enough on the ingredients. I used green curry paste (all I had) and I am sure it would have been better with red. The recipe also states Tomato puree - for me that meant tomato paste but when i looked at the amount needed - 14.25oz - I realized they must mean tomato sauce. I had to add some water to the curry mixture. It still turned out ok.

Cream Cheese Mints

I tried this recipe and there is no way they can be considered a candy. I followed the recipe and i had to pipe them as there was no way i could roll this. they have been drying for over 3 hours and i still can't pick them up. i am going to try to salvage them by dipping them in chocolate but will probably have to freeze them first to handle them. This recipe needs a lot of adjusting to get right so that doesn't make it a good recipe for me.
