Why is it when you put 6-8 grown women in hairnets in a kitchen, you end up feeling like  the sandbox monitor of a pre-school?  "Joann didn't take out her garbage" - "Well SHE didn't clean her grill" - "That's because you didn't finish it once last week!"  This is from 50-60 year old's - I try… MORE

It's 4am & I'm having one of my many bouts of insomnia - one might be able to call them "jello dreams," where you are a food service manager who wakes up in a cold sweat, not quite sure if the mashed potatoes were ordered, ground beef is thawed, or if the breakfast cook shows up for work.… MORE

I thoroughly believe in this saying.  I'm often accused of showing favoritism to my staff in the 20% category.  My apologies to all the human resource professionals out there, but anyone who is willing to take extra special care of our patients, doesn't get concerned if they get a break because… MORE

About Me
A generation "X"er who had the good sense to marry a patient woman, who happens to be a chef (those two characteristics rarely go together). I am one of the few men who have the ability & ignorance to claim the title "food service director."
My favorite things to cook
I enjoy grilling out & making soups & stocks from scratch. I make some mean salads too.
My favorite family cooking traditions
Eating whatever my mom prepares - she was probably the reason I got into the food service business to begin with. Guess I can blame her.
My cooking triumphs
Implementing restaurant style menus & room service for hospital patients - my attempt at breaking the "Hospital Food" stereotype that it no longer deserves.
My cooking tragedies
I did set a char broiler on fire once (but that was on purpose, they needed a new one) & NEVER add liquid margarine to a chocolate fountain. Not a good idea.
