Easy Pumpkin Muffins

OK, I really hope my review will help everyone making this... first off, I have made it two ways... the first was to the letter, as written. And as many have reviewed, it is extremely dense, and not very pumpkin-y, but still a solid 3 1/2 stars. I then changed it up, and added in 1/2 c. applesauce (one of those little cups that come in the multi-packs is conveniently exactly 1/2 cup!) and got rid of the spices and simply used 1 and 1/2 tsp. of pumpkin pie spice. I used my electric mixer on HIGH for at least a minute, giving the batter a heavy "mousse" like texture. Used loaf pans as well as muffin pans, and baked MUCH LONGER than called for... over 45 minutes instead of the 20-25 called for, and the loaves could actually have been good with five more. Five stars all the way with my revisions. Just a tip to all - go ahead and taste the batter. It will give you a very good idea of how it will taste when cooked, and give you the opportunity to play with adding more spice to your liking. As this doesn't have any raw eggs in it, you don't have to feel guilty about doing it! Good luck everyone!

Grilled Brown Sugar Pork Chops

OK - first off, February is not grilling season here on good old Cape Cod, MA - so I knew I needed to find an alternate cooking method. Here's what I did - I seasoned the chops with salt and pepper, and then browned on each side in a skillet in a little bit of butter. Removed the chops, scraped all the cooked bits, and then added DOUBLE all of the sauce ingredients MINUS the s&p, water, and cornstarch. I then plopped the chops back into the skillet, covered, and cooked for about 25 mins.... DONE! Was absolutely delicious, and the sauce caramelized very nicely in the pan and did not need the water and cornstarch to thicken. I definitely recommend doubling the sauce as everyone loved dipping the pork in the extra sauce.

Slow Cooker Chicken and Dumplings

Loved this... alot of people commented it didnt taste like homemade, and im assuming thats because of the biscuits being out of a can. there are plenty of good biscuit recipes on this site though, that could easily be used in this recipe... I for one wouldnt change a thing, and thought this was great tasting "comfort food" and its best!!

Turkey with Grandma's Stuffing

Mmmmmm, this was SO good.... I followed the recipe very closely, except I left the giblets out of the stuffing and put some sage and thyme in instead.... the turkey came out moist and delicious and everyone loved the stuffing.... Perfect!!

Sinfully Delicious Chocolate Pie

This pie is SO good.... I make this all the time... don't know why Raw eggs get such a bad rap... a raw egg is extremely nutritious, and I've been eating raw eggs for a long time now - as long as the eggs you use are fresh, you should have no problems. I always beat the eggs the full 5 minutes, but never use "fine grain" or food-processed sugar and have never had any grainy texture issues. Could be because the melted chocolate is still warm enough to help dissolve the sugar when I add it. Highly recommend this pie, its always a hit...

White Cheese Chicken Lasagna

Oh my..... this was SO good.... so rich but so delicious... I went with other reviewers and only used one bag of spinach, and mixed it with the ricotta. Used a shredded Rotisserie chicken and kept everything else exactly the same. Five stars all the way, but with the amount of cheese in this thing, I will only by making it once in a while!! : )

Amazing Slow Cooker Orange Chicken

Ok, so I was VERY weary of making this, after reading the reviews and especially after seeing the picture (I Thought, wow, that looks like something you'd see at the bottom of a porta-potty, not the bottom of a crockpot!!) But Im very glad I did try it...for the whole batter-falling-off issue, definitely recoat with another layer of flour when your done coating as per recipe directions. Or leave the soup out all together, but you will lose a thickness of coating if you do this, I know, I've tried it both ways. Also, I add the whole can of chicken broth and the whole OJ, as I like lots of extra sauce for dipping! It wasnt what you'd get at your local Chinese place, but it had an awesome orange flavor, and we loved it!!

Pizza Meat Loaf

We really liked this!! Very kid friendly and simple recipe to prepare. This was a different twist to the normal ketchup-brown sugar glaze I generally use for meatloaf...Like other reviewers, I added some garlic as well as using just regular bread crumbs from a can as opposed to the fresh ones the recipe called for. All in all, very tasty!!

Tuna Macaroni Salad

This was a hit with my family... The marinade really gives the pasta flavor. The only thing I did different was add a few hardboiled eggs and use Miracle whip for the mayo, only because thats all I had on hand... I might just use it again because it came out so well... Thanks for the great recipe.

Pineapple Fried Rice II

Loved it.... like other reviewers, I subbed chicken for the ham and cut out the extra salt altogether, as the soy is awfully salty. Doubled the eggs, and kept the juice from the pineapples for a more sweet taste... cant wait to make it again!!

Coconut Chews

These were great... I think the reviewer that said they tasted bad probably used unsweetened coconut, or maybe even used a cup of cocoa powder instead of the syrup?? Anyway, I didnt have choc. syrup myself, so I subbed hot fudge, and boy were they good!! I'd use the fudge again next time, even though I'm sure this adds a load more fat (but who cares, its a dessert recipe!!)

Marbled Pumpkin Cheesecake

Very good... i was being lazy, and didn't even bother "marbling" it, which subsequently resulting in my forgetting to add the last 1/4 cup of sugar..... didn't even miss it! I also doubled the spices as suggested by others. Next time I may give it a go with Neufchatel cheese, just to see if the extra spices and pumpkin flavor would mask the lighter taste.

Frog Cupcakes

Very easy, and very cute. I cut each marshmallow twice, widthwise and lengthwise, so I ended up using only 6, as each yielded 4 "eyeballs." I'm also unsure of this whole "glue the chocolate chip on with frosting thing" I knew that would be a fiasco, so I just jabbed the pointy end of each chocolate chip into the marshmallow till it was attached... much easier and less time consuming. I also didn't bother with the red food coloring, i just used brown and pink decorators icing to make the nostrils, mouth, and tongue. Overall, the kids LOVED these and I would definitely make these again!!

Slow Cooker Pulled Pork

Tasted awesome!! Pretty much kept the recipe exactly the same, just rubbed the pork down with some salt, pepper, and garlic for some flavor. Highly recommend using Dinosaur BBQ Sauce with this if you can find it at your grocery store - best bbq sauce on the planet, made right here in Syracuse, NY!! Also, definitely use the Reynolds Slow Cooker bags - the sugar from the soda carmelizes on the side of the slow cooker, making for a miserable cleanup - the bags make cleanup a breeze....will make this again and again!!

Easy Chicken Enchiladas

Woohoo! These were SO good... this is what I did... had an Old El Paso Enchilada Kit I wanted to get rid of... used the spice packet that came with it when I was cooking the chicken... read the other reviews and didnt want the top of the enchiladas to be hard, so I doubled the sauce (well kinda - I actually just used the same amount of cream cheese and doubled the salsa) Reserved about 1/3 of this to put on top of the enchiladas, then added the beans and chicken to the other 2/3. Added the reserved sauce to the top, topped with cheese..... DELICIOUS!! The enchilada spice packet gave it that extra zing some other reviewers thought was missing... I even got to use the enchilada sauce from the kit to make "Best Spanish Rice" on this site... awesome dinner!!

White Chocolate Chip Oatmeal Cookies

AMAZING!! Had to use dark brown sugar as I was out of light brown, and didn't quite have enough sugar to fill 1 cup, but they still came out FANTASTIC! Try this recipe, you will not be disappointed.
