Oatmeal Chocolate Chip Cookies I

Reviewed: May 4, 2008
Gave it 4 stars cuz I had to change a few things to make it 5 (I hate it when people review a recipe and rate it based on what they changed! They're not rating that recipe anymore!) Don't listen to other reviews and substitute butter... you'll just have flatter cookies NOT tastier! I added 1/2 c. oats, 1 tsp. vanilla, 1 tsp. cinnamon, and halved the amount of salt...5 stars now!

Easy Pumpkin Muffins

Reviewed: Aug. 6, 2011
OK, I really hope my review will help everyone making this... first off, I have made it two ways... the first was to the letter, as written. And as many have reviewed, it is extremely dense, and not very pumpkin-y, but still a solid 3 1/2 stars. I then changed it up, and added in 1/2 c. applesauce (one of those little cups that come in the multi-packs is conveniently exactly 1/2 cup!) and got rid of the spices and simply used 1 and 1/2 tsp. of pumpkin pie spice. I used my electric mixer on HIGH for at least a minute, giving the batter a heavy "mousse" like texture. Used loaf pans as well as muffin pans, and baked MUCH LONGER than called for... over 45 minutes instead of the 20-25 called for, and the loaves could actually have been good with five more. Five stars all the way with my revisions. Just a tip to all - go ahead and taste the batter. It will give you a very good idea of how it will taste when cooked, and give you the opportunity to play with adding more spice to your liking. As this doesn't have any raw eggs in it, you don't have to feel guilty about doing it! Good luck everyone!

Easy Chili II

Reviewed: Mar. 7, 2008
VERY very bland chili (Of course this could be guessed just by looking at the list of ingredients) If you want this to taste anything like what you would expect out of chili, be prepared to add 3 tbsp. Chili Powder, oregano and cumin, maybe some diced jalapenos, and cayenne pepper to taste. This just tasted like beef and beans with tomato flavor (wait...thats pretty much what it is!!)

Seafood Pot Pie

Reviewed: Nov. 30, 2011
This is very good. I'm from Cape Cod, so I started this recipe knowing I would NEVER use Clam Chowder from a can, and that I would use my own recipe that I always have in my freezer. Everything else stayed the same... although we liked it, I believe I will make it more of a typical pot pie next time by using the full sheet of puff pastry and making a bottom crust for it as well. I found the amount of milk to be just right, as I make a very thick Chowder!

Pizza Meat Loaf

Reviewed: Jan. 21, 2010
We really liked this!! Very kid friendly and simple recipe to prepare. This was a different twist to the normal ketchup-brown sugar glaze I generally use for meatloaf...Like other reviewers, I added some garlic as well as using just regular bread crumbs from a can as opposed to the fresh ones the recipe called for. All in all, very tasty!!

Turkey with Grandma's Stuffing

Reviewed: Nov. 27, 2009
Mmmmmm, this was SO good.... I followed the recipe very closely, except I left the giblets out of the stuffing and put some sage and thyme in instead.... the turkey came out moist and delicious and everyone loved the stuffing.... Perfect!!

Grilled Brown Sugar Pork Chops

Reviewed: Mar. 4, 2013
OK - first off, February is not grilling season here on good old Cape Cod, MA - so I knew I needed to find an alternate cooking method. Here's what I did - I seasoned the chops with salt and pepper, and then browned on each side in a skillet in a little bit of butter. Removed the chops, scraped all the cooked bits, and then added DOUBLE all of the sauce ingredients MINUS the s&p, water, and cornstarch. I then plopped the chops back into the skillet, covered, and cooked for about 25 mins.... DONE! Was absolutely delicious, and the sauce caramelized very nicely in the pan and did not need the water and cornstarch to thicken. I definitely recommend doubling the sauce as everyone loved dipping the pork in the extra sauce.

Frog Cupcakes

Reviewed: Nov. 28, 2011
Very easy, and very cute. I cut each marshmallow twice, widthwise and lengthwise, so I ended up using only 6, as each yielded 4 "eyeballs." I'm also unsure of this whole "glue the chocolate chip on with frosting thing" I knew that would be a fiasco, so I just jabbed the pointy end of each chocolate chip into the marshmallow till it was attached... much easier and less time consuming. I also didn't bother with the red food coloring, i just used brown and pink decorators icing to make the nostrils, mouth, and tongue. Overall, the kids LOVED these and I would definitely make these again!!

Amazing Slow Cooker Orange Chicken

Reviewed: Oct. 7, 2009
Ok, so I was VERY weary of making this, after reading the reviews and especially after seeing the picture (I Thought, wow, that looks like something you'd see at the bottom of a porta-potty, not the bottom of a crockpot!!) But Im very glad I did try it...for the whole batter-falling-off issue, definitely recoat with another layer of flour when your done coating as per recipe directions. Or leave the soup out all together, but you will lose a thickness of coating if you do this, I know, I've tried it both ways. Also, I add the whole can of chicken broth and the whole OJ, as I like lots of extra sauce for dipping! It wasnt what you'd get at your local Chinese place, but it had an awesome orange flavor, and we loved it!!

Crab Stuffed Chicken Breasts

Reviewed: Dec. 14, 2010
Very delicious... Made just as listed except had to leave out the mushrooms cuz I didn't have any. Next time I may substitute the "white sauce" for cream of chicken soup dilluted with a bit of milk or water, just to save myself some time. 5 Stars all the way!!

Cheese Soup with Broccoli

Very delicious. I deducted a star only because there is the amount of broccoli called for was way too low. i doubled it, and would even make it 3 cups the next time around. Otherwise, restaurant worthy soup!

Pineapple Fried Rice II

Reviewed: Aug. 12, 2010
Loved it.... like other reviewers, I subbed chicken for the ham and cut out the extra salt altogether, as the soy is awfully salty. Doubled the eggs, and kept the juice from the pineapples for a more sweet taste... cant wait to make it again!!

Pumpkin Cheesecake I

Reviewed: Apr. 5, 2010
I thought this was pretty good, but it wasn't as "pumpkin-y" tasting as I wanted it to be. Next time I will try adding more pumpkin puree and adding some of the premade pumpkin pie spice to see if it brings it up to a pumpkin pie type level.... but thanks very much for the starter recipe, there weren't any leftovers!

White Cheese Chicken Lasagna

Reviewed: Jan. 17, 2010
Oh my..... this was SO good.... so rich but so delicious... I went with other reviewers and only used one bag of spinach, and mixed it with the ricotta. Used a shredded Rotisserie chicken and kept everything else exactly the same. Five stars all the way, but with the amount of cheese in this thing, I will only by making it once in a while!! : )

New York Cheesecake I

Reviewed: May 16, 2008
Very glad I listened to other reviews and used half the amount of sour cream called for... this worked out great. Also added just a little almond extract (maybe 1/4 tsp) and am glad i did that as well, tasted great as is. Also recommend cooking 15 minutes at 400, and 45 at 200, cooks much better. Overall though, a nice cheesecake recipe, family enjoyed it.

Marbled Pumpkin Cheesecake

Reviewed: Nov. 24, 2011
Very good... i was being lazy, and didn't even bother "marbling" it, which subsequently resulting in my forgetting to add the last 1/4 cup of sugar..... didn't even miss it! I also doubled the spices as suggested by others. Next time I may give it a go with Neufchatel cheese, just to see if the extra spices and pumpkin flavor would mask the lighter taste.

Thai Chicken Curry with Pineapple

Reviewed: Aug. 11, 2011
This was very good. The only thing I didn't like was the fish sauce, I will definitely leave that out next time or sub soy sauce. We like our curry hot, so I tripled the amount of curry paste, and it still wasn't very hot, so next time I would add even more and perhaps sub the bell pepper for a hotter type. Thanks for the great recipe

Chicken Jambalaya II

Reviewed: Jul. 27, 2010
This wasn't bad, but took some doctoring to get it to where the family really enjoyed it. I added celery with the onions and peppers... instead of 1 can of whole tomatoes, I subbed diced tomatoes with green chiles (Rotel style), and instead of chili powder, I subbed cajun seasoning. Also the instant rice just didn't do it for us, and seemed to suck up all the juices, leaving the jambalaya dry, so the next time I made this, I used regular long grain rice cooked separately, and added it at the end.... after these changes it was much better
