I made this 2 ways at once: as written, and in a different pot, following my instincts with some changes. (neither used the optional anchovy paste, and both started with 2 fresh roma tomatoes cooked down and added a can of organic tomato sauce instead of the paste & water). After making both and comparing tastes - I compromised to these changes: double the garlic, and saute it in olive oil to remove bitterness. omit honey, but add it in at the end if your sauce needs some sweetness as that will depend on your tomatoes and will be different each batch. omit the marjoram and use a splash of lemon juice instead. omit cayenne. no salt unless you use all fresh or no-salt-added tomatoes. omit cheese and use it on top of pizza so you can appreciate that flavor. if time allows, fresh grated onion makes a big difference over the onion powder.
