Blackened Salmon Fillets

We have been trying to eat more salmon, and have tried several recipes - this is officially the "ONE". We cut back on the cayenne to keep it kid friendly, but other than that, cooked as written. We will fix this every week. I served it with rice and roasted asparagus and grape tomatoes with thyme.

Allison's Supreme Chocolate Chip Cookies

Wonderful Recipe! My kids hate oatmeal, but can't keep their hands off these cookies! The only substitution I made was 1 cup dark chocolate chips plus 3/4 cup mini M&M's for the 2 cups chips. Will definitely make again!

Honey Mustard Grilled Chicken

Perfect! Marinated chicken for 5 hours and grilled. Served with sauteed onions and mushrooms and a little extra sauce drizzled over the top. New family favorite!

Ham Chowder

Good with the omission of the rosemary. Also added mushrooms and red pepper, did not add leeks and green onion, just used yellow onion. Simmered with a bay leaf, parsley, sage, coriander and thyme.

The Best Red Enchilada Sauce

This was so much better than canned sauces. Instead of steeping in hot water after roasting, I put the roasted and cleaned chilies in a pan with the rest of the ingredients and simmered for 1 hour. I added more broth to compensate for evaporation. When done, I just took my hand held immersion blender and blended it though. Everyone (even my picky kids) loved it.
