Blackened Salmon Fillets

Reviewed: May 3, 2011
We have been trying to eat more salmon, and have tried several recipes - this is officially the "ONE". We cut back on the cayenne to keep it kid friendly, but other than that, cooked as written. We will fix this every week. I served it with rice and roasted asparagus and grape tomatoes with thyme.

Honey Mustard Grilled Chicken

Perfect! Marinated chicken for 5 hours and grilled. Served with sauteed onions and mushrooms and a little extra sauce drizzled over the top. New family favorite!

Allison's Supreme Chocolate Chip Cookies

Reviewed: Nov. 14, 2008
Wonderful Recipe! My kids hate oatmeal, but can't keep their hands off these cookies! The only substitution I made was 1 cup dark chocolate chips plus 3/4 cup mini M&M's for the 2 cups chips. Will definitely make again!

Skillet Chicken Cordon Bleu

Reviewed: Jan. 13, 2013
Used leftover ham - a little over a cup. Sauteed chicken pieces in garlic and herbs. Deglazed with wine and made sauce with herbs, leftover cheeses (muenster, swiss, mozz, parm) cream of mushroom soup and a splash of heavy cream. Delicious! Made elbow mac, drained and mixed right into skillet with meat and sauce.

The Best Red Enchilada Sauce

Reviewed: Jan. 31, 2013
This was so much better than canned sauces. Instead of steeping in hot water after roasting, I put the roasted and cleaned chilies in a pan with the rest of the ingredients and simmered for 1 hour. I added more broth to compensate for evaporation. When done, I just took my hand held immersion blender and blended it though. Everyone (even my picky kids) loved it.

Irresistible Double Chocolate Muffins

Reviewed: Mar. 6, 2010
Great recipe. A little drier that traditional muffins, so my 2nd batch, I added a 1/2 cup of applesauce and 1/8 cup oil. Also subtituted turbinado sugar for the brown sugar and sprinkled a little on top before baking. I think I will also try adding banana next time since canned pumpkin is scarce right now.
