Mexican Rice II

Reviewed: Dec. 28, 2012
This was wonderful. It was fast and easy and tasted so much better than I expected. Usually I end up tweaking a recipe along the way but this I made as instructed and it came out perfect. When I tested the rice after cooking I was disappointed but after it was mixed up (some of the tomato sauce had settled on the edges and needed to be stirred back in) and sat for a minute or two it was delicious. It was a big hit with the family and by the time dinner was over they were demanding I make it again in the future.

Ham Tetrazzini

Reviewed: Nov. 29, 2012
This recipe is basically a requirement every time we have leftover ham. It's easy and delicious and everyone in the family loves it. I up the cheese (mom always said you can never have too much) and leave out the parsley and peppers since we just never have them on hand. I also substitute milk for the water and up it a bit so it's not quite so thick.

Pumpkin Chocolate Chip Cookies III

Reviewed: Nov. 28, 2012
My family loved these. Not wanting to keep half a can of pumpkin sitting around, I doubled the recipe. I only used three cups of chocolate chips instead of the required four and even my mother (whose philosophy is that the dough is just to hold the chips together) said that was plenty. I loved them warm from the oven and though the ones from the fridge took a while to grow on me, I loved them too. I'll definitely be making these again.

Simple White Cake

Reviewed: Oct. 27, 2012
These made some delicious cupcakes and were very easy to make. Like most reviewers suggested, I made sure to beat it thoroughly after every addition and upped the milk to 3/4 cup. I also sifted the flour and baking powder together before adding them (per the video instructions). The batter was wonderful but cooked it wasn't quite good enough for five stars. I upped the vanilla to a full tablespoon (to fulfill someone's birthday request for vanilla cake) and paired them with cinnamon frosting from another site.

Six Can Chicken Tortilla Soup

Reviewed: Sep. 19, 2012
This was absolutely delicious. Don't assume that the canned chicken decreases the quality. We've had lots of different kinds of tortilla soup before and this was definitely the tastiest and the easiest. The only change I made was to add some chili powder. I used "original" flavor Rotel tomatoes and chiles but some people thought it was too hot so I switched to "mild."

Mexican-Style Goulash

Reviewed: Jul. 27, 2012
I didn't have high hopes for this recipe. It was more of a "we have everything it needs and I'm tired of trying to think of something" decisions. Boy, am I glad I ended up making this. It's become one of my dinner staples. Everyone's always very happy to see I've made it. I always double the recipe but with a few alterations. I only use half a pound of ground beef. The full pound might be better (any more would be way too much) but it's fine with half and with beef prices so high, there's no reason to use more. I only use one can of the diced tomatoes and two teaspoons of chili powder. And I use two heaping cups of pasta. It always comes out great. There's a reason this has become one of my family's favorite meals so quick.

Pie Crust III

Reviewed: Feb. 3, 2012
I'd never made pie crust (or a pie for that matter) before so I was looking for a nice, simple recipe and this was perfect. It wasn't as tasty as some crusts but it was fine all the same. I'll be making this again.

Fudge Puddles

Reviewed: Feb. 3, 2012
I love these! They were super easy and delicious. I did what a lot of people suggested and melted the chocolate in the measuring cup in the microwave. I ended up spooning it into the cups though, since the pouring was hard to control. Every time I've made this I've had leftover chocolate. I did what a lot of people suggested and put it in a dish in the fridge for a fudgy snack, but I also add coconut shavings to it for a little extra flavor.

Chinese Chicken Fried Rice II

Reviewed: Feb. 3, 2012
This was okay. It was more effort than my usual fried rice and not as good, so I probably won't be making this again.

Cheeseburger Soup I

Reviewed: Feb. 3, 2012
I loved this. It was quick and easy and delicious, exactly what I wanted. The only change I made was, instead of the flour mixture, I added a can of cream of celery soup.

Sugar Cookies with Buttercream Frosting

Reviewed: Feb. 3, 2012
I only made the cookies, partially because I don't have shortening and partially because I didn't want to risk the frosting with all the negative reviews I saw for it. Instead I used "Butter Icing for Sugar Cookies." I honestly wasn't planning on using any frosting but when I took a bite from the first batch of these it tasted like a sweet biscuit. Other people in my family said it tasted fine but it wasn't what I was looking for so I whipped up the frosting and they were great and much better the next day too. I'm definitely making these again.

Shepherd's Pie Daddy's Way

Reviewed: Jan. 28, 2012
I wasn't expecting much from this recipe but my family and I absolutely loved it. This was the only shepherd's pie recipe I looked at that included cheese and I almost didn't include it because of that but it definitely made the dish. I didn't have slices so instead I grated about half a cup of cheddar. Next time I think it'll be closer to a cup. I also added veggies like most reviewers, just some onions and carrots cooked with the beef and then some corn. I cooked it in a casserole dish instead of a pan to avoid any spills. This was more trouble than I usually like to go to for dinner but it was worth it. I'll definitely be making it again.

Chicken Chimi in the Oven

Reviewed: Dec. 31, 2011
My family loved this. We didn't have any garlic but it was fine without and I skipped the onion because my salsa had plenty in it already. I forgot to put the toothpicks in and so instead left them in the oven for ten minutes before turning only once so they were more set. I know at least one reviewer said they didn't like the beans because they made it soggy when reheated but I didn't have that problem at all and actually felt the beans made the leftovers. I'll definitely be making this again. Edit: I made this again recently with ground beef instead of chicken. (I skipped the food processor as well this time around though I don't think that made much difference.) They were delicious, better than the chicken version, I think.

Chewy Chocolate Cookies I

Reviewed: Dec. 30, 2010
My family loves these cookies. The only changes I made were to half the chocolate chips (because the first time I made them I didn't have enough and after that it just stuck) and to roll the dough in powdered sugar before baking. The only problem with them is that they don't keep well, so they should be made at most a day or two prior to eating. (But really, how could you wait a day or two?)

Peanut Butter Loaf

I love this! I increased the peanut butter to about a cup and added chocolate chips, then made it into muffins (12, cooked for 20 min). It was delicious. I'm definitely saving this recipe.

Best Chocolate Chip Cookies

Reviewed: May 18, 2009
My whole family loves this recipe and this is now my standard cookie recipe. When we moved I made the classic chocolate chip cookies (from the back of the bag) and my family was so sad because they couldn't measure up to these. The only change I made was to use pecans instead of walnuts, but only because those are what we always have.
