Oven-Roasted Asparagus

So simple and delicious! Why haven't I made this in the oven before? I usually steam, but this worked well tonight since I had potatoes and chicken in the oven. Just reduce the salt - a lot - I used maybe 1/4 tsp (a few twists of pink himalayan salt) and it was plenty as the cheese is salty. A drizzle of balsamic vinegar is fantastic if you don't have lemon juice.

Broccoli and Cheddar Quiche

It is an excellent base recipe! I substituted shittake mushrooms for regular mushrooms and added some spices (garlic powder, parsley, salt and pepper) and then it was amazing.

Creole Seasoning Blend

This spice blend was wonderful on wings! Like a previous reviewer, I omitted the cayenne and halved the black pepper so my toddlers would eat it. The whole family enjoyed it! When using on steak, use sparingly.

Mom's Zucchini Bread

AMAZING! Great taste and texture. My only modifications were reducing the sugar to 2 c and using 1/2 cup chopped pecans and 1/2 cup chocolate chips. My kids love it and I love it too!!!

Spicy Chicken Breasts

My hubby and I made this tonight and loved it. I did heed other reviewers' advice and cut the cayenne in half and found it to be hot but not overpowering. I also used kosher salt instead of regular salt (and reduced the amount a bit as 1 tsp kosher = 1.25 tsp table salt) and reduced the thyme a bit. May add a bit of oregano to the mix as that is used in Mexican cooking and adds nice flavour (not that flavour was lacking, but I like oregano). Thanks for the great recipe!

Best Bread Machine Bread

This was fantastic! The only changes I made were brown sugar instead of white, 1 teaspoon of kosher salt (equivalent to 1.25 tsp regular salt) instead of regular salt, and substituted 1 cup of flour with multigrain flour. The bread was moist, not too dense and had a crispy crust. I used the "Sandwich" setting for a 2 lb loaf on my Sunbeam. Thanks so much for the great recipe!!

Zucchini-Chocolate Chip Muffins

these are fantastic! didn't have any lemons, so i substituted orange juice. also used brown sugar instead of white. the muffins turned out moist and delicious and rose beautifully. will definitely make again! thanks for the great recipe!

Morning Glory Muffins II

These are fantastic!! Great flavour and texture. I made them with half whole wheat flour and they were still tender due to the fruits and veggies. Also did 1 c apple, 1 c canned pineapple and 1 c carrot instead of just carrot and apple. You can reduce the sugar if you use sweetened coconut - I reduced to 1 c and could have reduced it another 1/4 cup but no complaints - they are delicious!!

Clone of a Cinnabon

i cooked these as-is and turned the pan upside down to capture the drippings. didn't have any problem with the filling running out but would like more filling! would also be careful to watch the cooking time. i know my oven is a bit hot so although i went for a shorter cooking time, they were still a bit harder than i would have liked. not the recipe's fault - i just need to adjust for next time. doubled the icing and it was enough for generous portions with a wee bit left over. yummy!! made them 2 weeks ago and will make them again this weekend.

Pineapple Bread Pudding

My family loved this!! The pineapple makes all the difference! Baked it as-is but I reduced the sugar to 2/3 c and sprinkled pumpkin pie spice on top instead of cinnamon. Thanks for the wonderful recipe!

Slow Cooker Beef Stew I

I made this stew as written with the exception of dried onion instead of fresh (I hate chopping onions). Because of this, the stew was dry but I think regardless it could use a bit more liquid as I prepared the stew late in the evening and by morning, half the stew was stuck to the crockpot! : ( Would add and extra half cup of beef stock and half cup of water next time. Was still edible and in fact delicious so the recipe's a keeper - just be sure to add more liquid if making overnight (note: was on low for 12 hrs).

Red Velvet Cupcakes

Just made these today to take to a party. The only modification I made was to omit the red food coloring. I was very impressed with the results. The cake is easy to make, light like a box cake but without any of the chemicals and not too sweet - a perfect balance since the frosting's so rich. The recipe yielded 32 cupcakes (using medium size muffin cups) and I was able to heavily ice 29 of them so for those who don't use as much icing, there'd be some to spare. : ) The icing is very good - rich but not overly sweet. The sour cream does make the mixture quite moist, so just keep adding icing sugar until you get the desired consistency.

Beth's Spicy Oatmeal Raisin Cookies

These cookies were flavorful and soft. The only changes I made were as follows: 1) used 1 cup butter instead of half butter and half shortening 2) increased vanilla to 1.5 teaspoons 3) used 1.5 teaspoons pumpkin pie spice instead of cinnamon and cloves I also softened the raisins in warm water while I was measuring/mixing the other ingredients as other reviewers recommended. Cooked for 10 minutes for a golden colour but soft cookie. My family loved these and I love that the cookies are soft, but since everyone eats so many of them, I will reduce the sugar next time. Since the raisins are sweet themselves, I think the sugars could be reduced by a third and the cookie would still be satisfying (and not healthfood-like). Boilermaker Tailgate Chili

I made this chili tonight and it was fantastic!! The only changes I made were to reduce the amount of meat - I used 1 lb of ground beef, 2 Spolumbo's mild Italian sausages and no bacon bits. Since kids don't appreciate this much heat, I would reduce the cayenne pepper next time, omit the Tabasco (Tabasco or chili oil can be added at the table by those who like it how) and use just one or no green chili peppers. We had it with nacho chips and grated cheddar cheese. Sour cream on top would be great too - especially if you have little ones who need the extra calories. Thanks for the great recipe!!
