Cabbage and Dumplings

We (me, hubby and kiddos) like this best with the butter omitted and using 4 slices of bacon as the fat then served over homemade egg noodles.

I am rating this with the changes I made. I used quinoa that was about 85% pre-cooked (my kids don't like rice) and only added 2 ice cubes per pocket and no water. I cooked this on the grill for about 13 minutes. I think this was just a little too long for the shrimp, but was perfect for the broccoli. Next time I'd cut my broccoli smaller and cook for about 10 or 11 minutes and maybe cut the ice to just one cube. Overall it was easy, quick, and I'd make it again with the above changes.

Green Cabbage Caldo Verde

What a nice surprise this soup was! I only used half the amount of sausage the recipe calls for (which is what I had, and it was plenty) and I added a can of white beans. I also finished off with a squeeze of lemon to the pot. Super easy, yummy, and affordable soup – can’t beat that.

Acorn Squash Slices

My whole family enthusiastically devoured this squash. Including my husband, who does not care for squash, my 3 year old and my 11 mo old. We stayed with the slices (as opposed to chunks) and skipped the nuts and it was still wonderful; not overly sweet. My slices must have been on the thin side, so I would suggest checking it towards the end of cooking, so you don’t over do it. What more could you want in a recipe – delicious, easy, and cheap to make.

Oriental Shrimp Noodle Soup

Used green onions and put the Vietnamese garlic chili paste out for each person to season as they like. YUM YUM YUM!!!

Louisiana Sweet Potato Pancakes

Butternut Squash Rolls

Greek Green Beans

I loved this recipe; wonderfully simple and so very tasty. I also added oregano like another reviewer stated and used canned tomatoes. Make sure to have some crusty bread on hand to soak up the sauce.
