In-a-Pinch Ketchup

I've made this a few times but wasn't satisfied with the taste or consistency - way too sweet, and kind of grainy. Today I tried "Quick and Easy Ketchup" from this site - what a difference! Much less sweet, great flavor, and doesn't call for any cooking!

Quick and Easy Ketchup

What a great recipe! I didn't have apple juice concentrate, so I subbed 1 Tbl honey and added 1/2 cup minus 1 Tbl of water (in addition to the 3/4 cup in the recipe). I increased the vinegar slightly to add a little acidity that I thought might be missing without the apple juice conc (I used 4 tsp of apple cider vinegar in place of 1 Tbl white vinegar. And I used smoked paprika in place of regular. This is a keeper!

Winter Blossom's Often Requested Ham Salad

At first the salt was overpowering, so I added a half teaspoon of sugar. Not sure if that tempered it, or if it just got better with age, but three days later I can't stop eating this. I loved ham salad as a kid, and I hadn't found a great recipe - until now! Thanks!!!

Seven Layer Taco Dip

I wasn't crazy about the beans mixed with the taco seasoning. It kind of overpowered everything. I served this for a party, and for noshing the next day, and I still have more left.

White Bean Chicken Chili

This was quick and delicious! I used boneless skinless chicken thighs cut into 1/2" cubes and sauted them along with the onions and garlic. I couldn't find canned tomatillas, so I substituted 8 oz of salsa verde (green tomatilla salsa). I also substituted two 10 oz. cans of RO*TEL tomatoes for the canned tomatoes and chilis. Excellent light supper for a cool Autumn evening!
