Sauteed Rice with Kale

i've made this recipe several times now. I absolutely love it and is a big hit in our house. The first time I made this, I followed the directions to a "T". Since then, I have altered a few things. I made this for a side dish this evening and I added more Kale. Instead of 2 cloves of garlic I used a whole bulb of it since I love garlic and it never seems to be too much. I didn't have mushrooms or green peppers although I had the little sweet peppers and I used approximately 20 of them since I had a good bit on hand. I also added another stalk of celery. I felt that one stalk wasn't enough. Thank You BramptonMommyof2 for submitting this recipe!!!

Ricotta Pie (Old Italian Recipe)

Absolutely delicious. Probably the best pie I've ever had. I did cheat and use premade crust. Next I plan to try it with a little crushed pineapple.

Fresh Raspberry Balsamic Vinaigrette

This recipe is SUPER EASY to make as it was presented and very tasty! The only thing different that I used was Extra Virgin Olive Oil. Thank you so much for a wonderful recipe. This is a keeper for sure!!!!!

Mammaw's Waffles

The Waffles were EXCELLENT! The only different thing that I had done was instead of using regular buttermilk I had used powdered buttermilk and added some water to get it to the right consistency. They were very light, airy and fluffy as we like them!!

Bourbon Whipped Cream

This recipe is GREAT! Since I didn't have any bourbon on hand I had substituted Kahlua in its place equal amount. Quick and easy to make and serving it on Pumpkin Pie! Thank you!

Quick and Easy Pizza Crust

This is a wonderful pizza crust. I have tried it following the directions and it waS GREAT! Although, we tend to like a little bit sweeter crust so, I have added some honey to it.

Broccoli and Cauliflower Casserole

I Love this recipe. I read a lot of reviews and altered as others had. I wanted this to be a bit healthy so naturally I cut back on the amount of cheese. I cut back a little with the butter however, next time I will cut back even more and/or use cocunut oli instead. I felt that there was no real need for all that butter. Only my opinion of course. I also added left over Turkey. After makeing this last night for supper I figured out what I would do differently. I would make a roux and have this as a cheese sauce. I will make this again since after all it was so good even with the alterations that I had made.

Roasted Garlic Cauliflower

This was so simple and very good. The only thing I did different was that I added a small onion to it. I also added Oregeno and Itialian Seasoning to it. This is a keeper for sure!!!

Peach Pecan Sweet Potatoes

I thought this was excellent even though I had modified things slightly. THe first thing was that I didn't have any sweet potatoes so I used regular potatoes and I did not peel the potatoes. After making it last evening I thought to myself that there was some way to improve on what was done. My thought was to make a roux with the liqeur and the peach juice. We had leftovers, so this is exactly what we did. Then I reheated the potatoes with the roux that was made. It was so good. Another thing that I'd change next time is the butter. I would not add any butter to this. I feel it is not needed. Bottom Line is I loved it and Thank you so much for sharing.

Chicken with Tomatillos and Poblanos

I made this for dinner! It was awesome. I was looking for a recipe that used Tomatillos and when I read the recipe and I knew I had almost everything on hand. I made some variations from the recipe. I didn't have any Anaheim chile peppers on hand so I substituted by adding extra Pablano peppers. I didn't use vegetable oil. I substituted for a healthier version of oil (Coconut Oil). The recipe hadn't called for Parsley and I had fresh Parsley so I added that as well as the Fresh Cilantro. I didn't have black beans to add. I know I will make this again since it was a very good dinner and I will make certain to get black beans ahead of time when I expect to make it again.
