Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

Creamy Blueberry Pie

Not a big fan of this one. Thought the Cream Cheese Blueberry pie was way better. Just didn't like the consistency. Everyone else seemed pleased and thought it was great though so maybe it's just me.

I'm a big pie maker and fan and this ranks up there as one of my favorite. I did make a shortbread crust and it really complemented the pie. Made with fresh blueberries but think I will try frozen when they are out of season and am willing to bet it I will still taste great. I may try putting it in a springform next time just to make the cooking of the shortbread crust easier.

Roast Sticky Chicken-Rotisserie Style

Top notch. Made as written but did cut back on the cayenne pepper a little as we don't like things to hot. It didn't take 5 hours more like 4 to cook two very large birds. One was an Roaster chicken 7+ lbs

Bacon Wrapped Smokies

Okay but i probably won't make again. Made for my birthday and my friends husband ate probably half of them. He was a huge fan but everyone else agreed a little on the greasy side.

Clone of a Cinnabon

Awesome! Followed other suggestions. Mixed butter, cinnamon and sugar together before spreading. Made it in stand mixer. Spit it into 2 9x9 pans and put one in the fridge overnight and one in the freezer for later. Worked great! Definitely double the frosting (or if separating make per direction for each batch)

Caramel Popcorn

Came out great. Used microwave presto popper and the whole thing was a lot easier to make then i thought it would be. Word to the wise though don't eat hot caramel off spoon... it burns:)

Black Bean and Corn Quesadillas

Great recipe! I will make this again and again. I have actually already sent it to several friends. Like suggested i folded ours in half and fried two at a time in my 12" cast iron skillet. I added one cup of frozen corn instead of canned and it was nice and crisp. Came out amazing. My husband did request the addition of chicken as he is a big meat eater. When i used the leftovers for lunch i actually just added some ham in his and he said it was excellent.

Golden Pork Chops

Excellent! I actually made just an individual portion as my husband was out of town and it made a really easy and very good meal for one. I doubled the sauce, mushrooms and onions. A real keeper.

Downeast Maine Pumpkin Bread

I made the changes suggested by other people but also added pecans to half. The ones that had the pecans were a hit... the others were okay but not that great. I think if I will probably skip making these again though as they weren't that great.

Portuguese Sweet Bread I

I am a huge bread fanatic and this bread just did nothing for me. Normally I take bread out and eat half the loaf on the spot but i ate one piece and knew it wasn't what i was looking for. To dense and sweet but not in a good way. Ithink the Amish white bread recipe on here is much better.

Swiss Chicken Casserole I

We liked this and it is nice and easy at the end of a day. Did make the changes suggested. Used white wine and mixed butter with stuffing to make it moister.
