About this Cook
As my kids were growing up,I never really had the chance to take the time to cook (lived in alot of arena's), besides very quick, boxed, already prepared meals. Now that they are basically on their own, i really do enjoy trying new things. I enjoy being in the kitchen and have declared it "My Room". My significant other is enjoying it too! He called himself the guinea pig for awhile but not so much anymore and has declared that the kitchen, "Is not his room"!

My favorite family cooking traditions
Well.. it's not Family, but my significant other and I throw an annual Customer Appreciation Wknd every August. We usually enjoy about 50 guests and close friends for 2 days. I start to plan the menu's in Feb and tweek them abit in June, but it has become something that I really look forward to. The tradition is on the saturday night where a large pot of homemade Jambalaya from scratch comes out as part of the meal. It's just so much better than the usual Chilli for a large crowd.
My cooking triumphs
My first Customer Appreciation Weekend, menu's for 2 days, breakfast, lunch, dinner and a midnight snackie, where the guest list reached 58 for Saturday night dinner, and the Sunday night was 17 for a sit down at one table(2 lawntables pushed together)Steak & Potatoe dinner. 2 full days of menu's and nothing got burnt or oversalted! Thank you to all my girlfriends who helped me pull it off!
My cooking tragedies
We had 12 for a snowmobile meeting, where i had made a big pot of chilli and other fixins, but as we were spooning out the chilli, one of my guests advised me that the chilli was burnt to the bottom of the pot!

Cream Soup Base
I use this rather than buying the canned cream soup for my Chicken Pot Pie, and I can actually pronounce the ingredients!

Barbequed Pork Ribs
These turned out ok, and I only say ok, as I had read all the other reviews and was expecting more. I did not buy the ribs myself, but the meat did fall off the bone. I think that I will tweak the sauce abit more as it was just sauce to me, but everyone said they were good, tasty was the comment. Make sure you simmer them at least 2.5 hours depending on the size of the ribs as one part was not cooked through. Will make them again, just tweak the sauce, maybe more spice?

Stuffed Mushrooms I
I was looking for The Keg's Mushroom Neptune, and this recipe was very similar. I used the larger mushrooms, and baked them first as advised in another review, (remove stems, brush tops with alittle Olive Oil,place caps side up and bake @ 400 for about 10 mins or until most of the water has seeped out on to the pan. place on paper towels and let cool completley and place in air tight container until ready to use). I cant imagine the water if i did not do this step. Make sure you take the time to bake them first. I will change this receipe up a bit and use only 1/2 the cream cheese amount, but the same amount of crab meat and use more spices, just too bland, missing something, and i will use smaller mushrooms,but its a great recipe to get going.
