Cranberry Nut Bread I

Unbelievable recipe! I didn’t have fresh cranberries so I substituted Craisins, soaking them in the OJ to bring them back to life. I also used a combination of Splenda (6 packets) and brown sugar (1/2 cup) in place of the white sugar. I didn’t have orange zest so I added 1/4 teaspoon of ground ginger. I also used applesauce in place of the oil, making the bread even tastier! I made mini muffins rather than a loaf of bread and I baked them at 350 for 22 minutes. I will be making a SECOND batch later tonight! Yum!

Blackened Fish

This is AMAZING! We cooked this fish outside on the burner on our grill. Don't try to cook this inside! The flavor is incredible and I didn't alter it at all. I have an extremely sensitive tongue and I always tone down the spice in recipes, but this one is perfect! Try it as is before you change anything!

Red Potato Salad

Ummmm...YUM! This recipe is delicious. I cut the dill a bit (not a fan), increased the dijon by two teaspoons for an extra kick and added diced red bell pepper for some additional color and crunch. Very, very good!

Grilled Salmon with Habanero-Lime Butter

This recipe is definitely going to be making frequent appearances at my dinner table! I'm not a fan of spicy dishes so I did cut the habenero in half. I'm glad I did, too, as it would have been a little too spicy for my sensitive tongue. However, this recipe is so balanced that I wouldn't dare cut the habanero any more than that! I tried the recipe a second time in a smoker and it was even better!

Baked Orange Roughy with Veggies

I too, substituted lemon juice for the orange juice. I also followed suit and omitted the green bell pepper but added garlic and parsely. It was AMAZING! My husband despises baked fish, but he loved this recipe! We will make this often!!
