Creamy Butternut Squash With Cinnamon Soup

Reviewed: Jun. 23, 2008
FABULOUS! If I could give this more than 5 stars, I would. Very smooth, creamy, and a superb blend of spices. I made this for my husband and me, and I wish that I had doubled the recipe for our dinner-we both wanted more. This would make an excellent Thanksgiving or Christmas soup, but it is so good that I don't think that I could limit eating it to only the holidays!

Baked Potato Soup

Reviewed: Jun. 23, 2008
I love this soup! So quick and easy. I simply baked up extra potatoes for a baked potato dinner a couple nights before, then used them here. I used 2x the potatoes called for in the recipe. I prefer this recipe without hot sauce. A prior time I made the recipe as directed. The flavor of the hot sauce in the soup was a bit odd to me, and I think it overwhelmed the other flavors in the soup. Perhaps if the heat came from pepper flakes or cayenne pepper I would have liked it better. The consistency was nice.

Broccoli with Garlic Butter and Cashews

Reviewed: Jun. 20, 2008
Oh, my! This is tasty! It's the perfect combo of slight sweetness, saltiness, tang... I didn't have brown sugar, so I used white sugar and added a splash of molasses. 'Didn't have white vinegar, so I used seasoned rice vinegar. Fabulous! LOVE it!

Granny's Banana Bread

Reviewed: Jun. 5, 2008
My hubby and I absolutely love this! And it's healthy, too! I've tried making it with both 4 and 3 bananas, and prefer it with only 3 bananas, adding a little plain yogurt to get the batter to the right consistency. I increase the cinnamon to 1 tsp., because I love sweet breads a little spicy. I make it into 2 loaves, and bake it for 45 minutes.

This is good. Next time I may add another potato and a bit more curry. I definately will make it again!

We made these when we had friends over for a game night, and they absolutely loved them, as do my husband and I! What a fun dish.

Rhubarb Muffins

Reviewed: May 26, 2008
Oh, yum! These are so moist and delicious. As suggested by others, I substituted whole wheat flour for the all-purpose flour, added the spices and almonds to the batter and didn't make the topping, and since I didn't have vanilla yogurt, I simply used plain yogurt and added 1 tsp. vanilla extract. What a great recipe!

Mango Lassi II

Reviewed: May 14, 2008
This is wonderfully refreshing! I usually don't have fresh mango on hand, and so I use 3 cups frozen mango that I buy in bulk. We love it so much, that it has become a regular fixture at our Saturday morning breakfast table!

Cilantro-Lime Rice

Reviewed: May 14, 2008
There was way too much lime juice in the recipe for my liking, and I really couldn't taste the cilantro.

Quick and Easy Pizza Crust

Reviewed: May 14, 2008
The best pizza crust recipe that I have ever made! When using jarred active dry yeast, 2-1/4 tsp. yeast = (.25 ounce) package active dry yeast.

Cavatelli and Broccoli

Reviewed: Apr. 13, 2008
Great flavor, with a little zip! I added the red pepper flakes to the oil when adding the garlic (rather than at the end), using only 1/2 tsp., and also added italian seasoning, basil, chicken seasoning, salt and pepper to the oil. I'll definately make it again! FYI - 1 1/2 c. dry pasta is about 3 cups.
