Homemade Black Bean Veggie Burgers

My Hubby's favorite! Great texture and flavor, in need of no adjustments. To deal with the stickiness of the mixture, simply spray a 1/2 cup measure with non-stick spray, spoon the mixture in, and slide it out onto your cooking surface. You can spray the bottom of the cup and use it to flatten the mound to a burger shape. I ended up frying them because it was too hot in my kitchen to use the oven. Fry for about 5-7 min. per side, on medium heat. These will become a household regular for us!

Veggie Burgers

Fabulous! Great texture and flavor, and packed full of veges! These will be a regular with us. Once I was in a pinch for time and couldn't wait an hour, so I added some potato flakes to thicken, and they turned out great!

Jamie's Cranberry Spinach Salad

Very good! I love the sweet tangy-ness of the dressing, and the craisins. I added a pinch of salt to the dressing, and that made it perfect. I only had shaved almonds on hand, and they just didn't taste right. I would recommend only using slivered almonds, as the recipe calls for.

Basic Flaky Pie Crust

I tried this recipe with both a quiche and a fruit pie, and the crust had too much of a shortening aftertaste, and it was a bit too salty for me. But it lives up to its name, and is a flaky crust. I probably won't make this crust again.

Pizza Crust Fantastico

This is the perfect pizza crust texture, and placing the dough on a preheated pan really makes a difference! But perhaps I am a purist when it comes to pizza crust - the tomato sauce and spices were a little overpowering for me. I tried this recipe again, omitting the tomato sauce and all spices except oregano, and made it into one cookie sheet size pizza, and it was absolutely the best deep dish crust! Definately 5 star with the adjustments.

Baked Oatmeal II

FABULOUS! I love how spicy this is! As suggested in the reviews, I added 1/4 t. cloves, only used 1/2 c. brown sugar, and substituted 1/4 c. melted butter and 1/4 c. applesauce for the 1/2 c. butter. I also added some sweetened flaked coconut and ground flax seed. I will be making this often!

Creamy Butternut Squash With Cinnamon Soup

FABULOUS! If I could give this more than 5 stars, I would. Very smooth, creamy, and a superb blend of spices. I made this for my husband and me, and I wish that I had doubled the recipe for our dinner-we both wanted more. This would make an excellent Thanksgiving or Christmas soup, but it is so good that I don't think that I could limit eating it to only the holidays!

Baked Potato Soup

I love this soup! So quick and easy. I simply baked up extra potatoes for a baked potato dinner a couple nights before, then used them here. I used 2x the potatoes called for in the recipe. I prefer this recipe without hot sauce. A prior time I made the recipe as directed. The flavor of the hot sauce in the soup was a bit odd to me, and I think it overwhelmed the other flavors in the soup. Perhaps if the heat came from pepper flakes or cayenne pepper I would have liked it better. The consistency was nice.

Broccoli with Garlic Butter and Cashews

Oh, my! This is tasty! It's the perfect combo of slight sweetness, saltiness, tang... I didn't have brown sugar, so I used white sugar and added a splash of molasses. 'Didn't have white vinegar, so I used seasoned rice vinegar. Fabulous! LOVE it!

Granny's Banana Bread

My hubby and I absolutely love this! And it's healthy, too! I've tried making it with both 4 and 3 bananas, and prefer it with only 3 bananas, adding a little plain yogurt to get the batter to the right consistency. I increase the cinnamon to 1 tsp., because I love sweet breads a little spicy. I make it into 2 loaves, and bake it for 45 minutes.

Rhubarb Muffins

Oh, yum! These are so moist and delicious. As suggested by others, I substituted whole wheat flour for the all-purpose flour, added the spices and almonds to the batter and didn't make the topping, and since I didn't have vanilla yogurt, I simply used plain yogurt and added 1 tsp. vanilla extract. What a great recipe!

Mango Lassi II

This is wonderfully refreshing! I usually don't have fresh mango on hand, and so I use 3 cups frozen mango that I buy in bulk. We love it so much, that it has become a regular fixture at our Saturday morning breakfast table!
