Sweetened Condensed Milk

Works great! Makes 1 cup. Convert to 22 servings to equal a 14 ounce can of sweetened condensed milk (1-1/3 cups).

Orange Whole Wheat Pancakes

Absolutely delightful! Delicate flavor with none of the typical slight bitterness that whole wheat pancakes can have. I didn't have orange extract, and so I used lemon juice instead. Puffy and light. These will be a regular with me!

Banana Stuffed French Toast

FABULOUS! I used orange juice concentrate in place of the orange liqueur, and it is just great! The sliced bananas give a wonderful depth and texture to this recipe. This will be a regular wih us.

Oh, yum! Great recipe. If you don't have an herb garden, or your grocery budget is tight, dried herbs are just fine. Just remember - use 1 tsp. dried herbs for 1 Tbsp. fresh herbs.

Creamy Sweet Potato With Ginger Soup

Wonderful! Smooth, spicy soup. Just the right amount of zip. I love it! 1-1/2 pounds is basically 2 medium sweet potatoes, and around 4 cups cubed.

Pumpkin Pancakes

I love these! Such a beautiful sunny color, and cozy flavor. I used evaporated milk, and 1/2 whole wheat pastry flour. Yummy! They are so puffy (don't add extra milk to batter-they're great thick). Since they're so thick, I cook them on med. heat.

German Apple Pancake

Perfect made exactly as the recipe calls for. The first time I made it was a true winner, and then the second time I made it, I tried some of the suggestions in the reviews-big mistake! Additional cinnamon is overpowering and knocks out the delicate nutmeg flavor in this recipe, and decreasing the butter simply doesn't work. I also prefered 1 apple instead of 2, as 2 seemed to make it soggy. I went to a thrift shop and purchased a $5 cast iron skillet for this recipe, and it was so worth it! And it came already seasoned! What a bargain.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Very nice-light and fluffy-pretty amazing for a whole wheat pancake! I found it is best to let the batter sit a few minutes before frying, and it really is important to make them the 1/4 c. size, and not larger-they kinda fall apart at a larger size.

Vegan Chocolate Cake

I made these into cupcakes for a picnic we had with my vegan aunt, and everyone loved them! I baked them at the same temperature for 30 minutes. Cupcake liners are necessary-they stick otherwise, even with greasing the cups.

Delightfully quick and easy! I want to avoid boxed mac-n-cheese because I don't want all the preservatives and artificial flavors (not to mention the inferior taste) for my toddler, but I need quick, and this fits the ticket!

Green Bean Salad with Feta

Refreshing, light salad. Tasty! After I briefly steamed the fresh green beans, I ran them under cold water to chill them. I added sunflower seeds, used melted orange juice concentrate rather than OJ, and omitted the fennel seed, and the craisins are awesome in this recipe! Definately don't omit them. I liked the way the lettuce wilted, and may try the recipe with hot green beans next time to see how it compares. Great recipe!

Mom's Best Granola

Tasty, and not too sweet (which I like!). I divided the recipe between two cookie sheets, and I always bake my granola at a very low temperature, which gets it nice and crispy without burning. I baked this at 225 degrees for 1 hour 45 minutes, switching racks every 30 minutes. At this temperature, there is no need to stir with each switch.

Tomato Spinach and Basil Soup

Great flavor! I didn't have any tomato sauce, and so I used diced canned tomatoes, and although it was a totally different consistency than the recipe would be, it was yummy!
