Best Cream Of Broccoli Soup

Great soup! I also prefer just mashing with a potato masher. Also doubled the celery. It's refreshing to have an alternative to the typical cheesy broccoli soup.

Absolute Best Pancake Syrup

This is a bit too rich and sweet for me. It tastes like a cinammon roll. Great thick consistency-no need for cornstarch as some have recommended.

Whole Grain Waffles

My new waffle recipe! These are absolutely wonderful. The amount of flax meal kinda scared me, so I replaced 3/4 of the flax seed with oats ground up in my coffee grinder (1/4 c. + 2 T. oats), and used 1/4 of the remaining flax meal (2 T. flax meal). The batter was very runny, so I let it set up for 5-10 minutes before cooking, and the batter became the perfect consistency.

Bananas About Homemade Yogurt!

I didn't like the flavor of this. The texture was fine, but I expected more banana flavor, but it tasted to me like plain yogurt with a too heavy taste of vanilla and not much banana. I think a tinge more sweetness would really help.

Pasta e Fagioli II

Delicious! I didn't use prosciutto, and so I added a couple tsp. beef bouillon. In place of tomato juice I used 2 c. (14.5 oz can) italian style diced tomatoes and 1 cup tomato sauce. As suggested, I only used 1/3 the pasta. Such a wonderful soup!

Fat Free Refried Beans

Delicious! I like my onions very well cooked, and so I sauted them in "I Can't Believe It's Not Butter!" (I know-not fat-free), and then added the remaining ingredients as directed. I used chicken broth in place of water, added some cumin, and in the last few minutes of cooking added a handful of chopped cilantro. Great in burritoes!

Sunrise Salad

Refreshing! My 2 yr. old doesn't like the jiggly texture of jello yet, but loves this, since it is so creamy. I used plain yogurt in place of sour cream. If someone doesn't like the chunks of sour cream, all they have to do is mix it in with the banana mixture before stirring into jello mixture. We like using blackberries rather than strawberries. I've also made it with orange jello and blueberries. Yum!

Whole Wheat Pancakes

These are so good, and the perfect texture. I replaced the butter with 1/2 applesauce and 1/2 canola oil, made soured milk in place of buttermilk (1 Tbsp. vinegar for each cup of milk), replaced a couple Tbsp. of white flour with flax meal, and they are just wonderful.

Very Chocolate Ice Cream

Absolutely decadent! Rich and creamy. I used 3.5 oz. Green & Black's Organic Dark Chocolate with 70% Cocoa content (rather than 2 oz. semisweet). Very dark, and very delicious. This reminds me of a Bittersweet Chocolate Love Affair ice cream that we would have at our favorite ice cream shop in Vancouver, WA.

Cantina Pinto Beans

Family loves this recipe! I used 4 (15.5 oz.) cans rinsed/drained pinto beans (1/2 c. dry pinto beans = 1 (15.5 oz.) can prepared beans) to speed things up, 2 c. double strength chicken broth, sauted veges, added spices to veges and sauted another 2 minutes so spices' flavor would "pop," then added to beans and cooked another 20 minutes or so. Since I didn't have any Mexican style tomatoes, I blended until smooth 1 onion, 1 tsp. minced garlic (or 2 cloves garlic), several seeded slices of canned jalapenos, sauted them in oil a couple of minutes, then added regular canned diced tomatoes with juice and cooked 5 more minutes, then added to beans and cooked as directed. Next time I'll simplify things by sauteeing all the veges together except tomatoes at the beginning of the recipe. Great served with "honey cornbread" from this same site, and my toddler loves this combined with cheddar cheese and wrapped in a burrito shell.

Perfect Berry Shortcakes

Mmm! Light and flaky! Don't skip the egg wash and sprinkled on sugar. So good! I used whole milk in place of half-and-half, since I didn't have it. I think one of the keys is minimal handling, which forming into a rectangle and slicing accomplishes.

Potato Leek Soup I

Great recipe! I love the flavor! Since my 2 year old's favorite part of soup is the chunks of potato, I didn't wiz it up, and it turned out great, still with the smooth, thick texture. I added the leeks to the potatos as soon as they were sauted, and let them cook down further with the soup. I will make this again and again!

Dutch Apple Pie with Oatmeal Streusel

My husband absolutely loved this! Lemon zest in the streusel was fabulous. Try it! I thickened the filling additionally with 1 Tbsp. of quick tapioca as one reviewer recommended, but I think it made the pie too thick (I used granny smith apples). Next time I will make it just as the recipe says. I had to bake the pie an additional 30 minutes, but I am at high altitude, so that can be expected.

Raspberry Lemon Muffins

Delightful muffin! I used 1/4 c. wheat germ, 2 T. flax meal, and the remainder whole wheat flour in place of white flour, and used lemon yogurt. I'm sure plain yogurt is good, also. Great recipe!

Easy Lemon Cookies

Delightful! Light and refreshing. I didn't have any lemon extract, and so I used the zest of 2 lemons and 1 tsp. lemon juice. Yummmy! I will definately make these again!

Creamy Macaroni and Cheese

My new mac-n-cheese recipe! So creamy. I made half the sauce, which was the perfect balance to pasta for me, used fat-free evaporated milk, and no mustard due to personal aversion to mustard in mac-n-cheese. The flavor is wonderful! This recipe will be a regular. My 18 month old loves it!
