Heavenly Blueberry Smoothie

Even my little girl who typically doesn't like smoothies loves this! So creamy, so tasty. I didn't have flax, so I added some slivered almonds, didn't have vanilla yogurt, so used plain yogurt and added 1 tsp. vanilla. I also added a pinch of nutmeg. Yum!

Hummus III

We love this! I only drain 1/2 the water off the garbanzos, and only use about 1 Tbs. lemon juice. Wiz in my NutriBullet till smooth. Easy and perfect for our tastes!

Doug's Easy Applesauce

The best! All of my family loves it. Using apple cider (Honeycrisp apple cider is fantastic) instead of water like most recipes makes all the difference! I use a little less lemon juice than called for. This is THE recipe for us. I simply quarter the apples (no peeling or coring), cook till soft (takes longer than 20 min.), cool in fridge, then send through food strainer/food mill. Yum!

Banana Muffins I

I love, love, love these! Not too sweet, light and moist. I used all whole wheat flour, added cinnamon and raisins. The best! 1 c. banana is about 2 bananas.

Creamy Hot Cocoa

Fabulous! I'm sure that it's even better the way it's written, but my kids want hot cocoa each time we've been playing out in the cold weather, so to make this a daily winter warm up, I simply use Xylitol for the sugar and 1% or 2% milk for all the dairy. It's still creamy smooth and delicious!

Bread Machine Challah for Shabbat and Festivals

So good! I sweetened it up using 6 Tbsp. sugar (as another suggested) since I made this for Rosh Hashanah, added raisins, and sprinkled the loaf with sugar prior to baking. What a lovely, sweet (as I made it) loaf, that I will continue to use for Rosh Hashanah! FYI-it does need at least 1 1/2 c. more flour than recipe states. For weekly challah, I use one additional Tbsp. sugar, 1 c. whole wheat flour for part of the flour, and occasionally add raisins when bread machine "beeps," then braid into 2 loaves. Baking at 350 for 10 min., then decreasing temp to 325 for 10-15 more minutes works best for my loaves.

Fabulous Zucchini Grinders

Yum! My 5 yo son and hubby love these!! We prefer monterey jack cheese, and make sauce as directed, substituting Trader Joe's marinara sauce for the canned tomatoes, and don't blend in the blender. I've tried "cheating" by only using spaghetti sauce. It simply isn't as good. Add the extra ingredients to the sauce!

Quick and Almost-Professional Buttercream Icing

THE BEST!!!! I've never liked buttercream frosting because it's usually too sweet and greasy tasting for me, but this is absolutely MARVELOUS! Not too sweet, delicate flavor, and light. This is now my recipe to cover all upcoming birthday cakes. No more canned frosting for me. There is no comparison between the two. If frosting 3 dozen cookies, 4 servings of frosting is about right.

White Almond Wedding Cake

This is the most wonderful cake! It is so moist. I made this for my daughter's 2nd birthday cake, and will make it for many more birthday cakes in the future! With a recipe like this, I may expand myself to make cakes even outside of birthdays. Yum, yum!

Whole Wheat Bread III

Delicious! I prefer to bake in oven, so I did dough cycle on breadmaker, baked oblong freeform loaf at 325 degrees for 30 minutes. So moist, chewy, and satisfying. I didn't add the 2 Tbsp. sugar, and it was still sweet enough.

Ultimate Twice Baked Potatoes

YUM! My 4 yr old asked for 3rds! I love it. After scooping the potato whites out, I baked the skins 5 minutes on their own, just to strengthen them, and also used a ziplock baggie with a clipped corner to stuff the skins. Much easier that way. Great finger food for the football game, or for dinner.
