Tortilla Espanola (Spanish Tortilla)

I made this in about an hour and a half. The trick is to use plenty of oil, season everything and have a mandolin to slice the potatoes and onions; the slices should be no more than 3/8". Put no more than 1 layer of potatoes in the skillet at a time to cook (not half of them at once!) The onions, however, can all go in at the same time. And the broiler trick does work; after letting the omelet set, shove it under the broiler for about 4-5 minutes. Voila!!

Jamaican Oxtail with Broad Beans

I must have screwed this up somehow. I added more than 1 1/2 cups of water before I turned on my slow cooker, since I didn't want the water to evaporate. I also doubled the amount of spices, but it didn't have any flavor. I'll have to try it one more time with less water.

Sesame Noodles

My only regret is that there wasn't enough sauce for my taste! Aside from that, it was delicious. I used vegetable oil instead of safflower and wheat noodles. I will be making this again!

Candied Almonds

I did these as a last minute topping for a pear/blue cheese dessert, and they turned out beautifully. I used half brown and half white sugar. I cooked them till the nuts were still a little sticky, and then turned off the heat and let them cool. By the time they were back to room temperature, the sugar had crystallized.

Easy Chicken Posole

I thought this was great. I made a smaller version for me and my husband with homemade broth (skipping the boiled chicken breasts), cooked and shredded a leg and thigh, and followed the rest of the recipe. Good stuff!

Fried Rice with Chicken

I loved this! The perfect way to use up that leftover white rice in the fridge! I used mixed vegetables instead of the carrot and celery, and it worked!

Monkey Bread I

Finally, a dessert my husband will eat that doesn't involve strawberries and whipped cream! I made my biscuits from scratch (I added cinnamon and nutmeg), doubling the recipe, and made homemade caramel as well. The biscuits were rolled in the cinnamon sugar and stacked, with a butter-white sugar mixture poured on top. The latter soaked into the bread, so I made caramel and poured THAT on top after it came out of the pan to keep it sweet and moist. Good stuff!

Curried Coconut Chicken

Other curry recipes I've seen are really complicated. This one was incredibly simple. It took me about an hour and a half to prepare, and my household loved it. In fact, my roommate graciously told me I was allowed to make it any time I wanted. :p

Awesome. I used turkey meat and peanut oil, and I'd run out of cabbage so a bag of frozen peas and carrots had to suffice. But even so, it was really, really tasty.

this was delicious! the only change I made was to use 3/4 cup white sugar and about 1/2 cup molasses. It cut down on the cooking time by about 10 minutes. My entire household enjoyed it!

Churros

We had these for breakfast and they were delicious. I used the cut off ziploc bag trick too, and it worked just fine. I let the dough cool slightly before putting it in the bag, and I added about 1/4 cup more water (the dough was a bit too stiff to squeeze the first time). As a result, my churros were crispy outside and soft on the inside--perfect!

Baked French Fries I

This was good. The only reason it got four instead of five stars is a) yes, it needed more salt, and b) the fries weren't crispy, which is what I was expecting. Still tasty, though.

Oven Fried Chicken II

Exactly what I was looking for in an oven fried chicken recipe. I swapped out the Italian bread crumbs for crushed cornflakes, and it worked just as well. Delicious!
