Easy Mashed Potato and Roasted Vegetable Enchiladas

This recipe turned out pretty good... I'd make it again, but the only downside is that it kind of takes a long time to make and uses a lot of pots and pans. The cleanup and prep are kind of high for this one, though it turn's out good, not amazing though.

Peach Cobbler

The recipe came out pretty good... but a word of caution novice cooks: 1/2 cup of butter melted is NOT the same as putting 1/2 cup of putter and then melting it. It turns out to be WAY too much butter and I found out the hard way. My cobbler was dripping in excess butter and was soggy at the bottom. Make sure you melt the butter and then measure a 1/2 cup.

Cookie Mold Sugar Cookies

Cookies were pretty good. The consistency of the dough made it hard to roll it into a sheet and stamp out the shapes... you really do need to follow the recipe and put the dough into the mold. It kind of makes it slow to shape all of the cookies, and hard to keep them all the same consistency. The taste is pretty good though.

Zucchini 'Noodles'

For what this is, its pretty good. It was pretty low-calorie which is what I was looking for, and fairly tasty too. I probably could have eaten 16 servings myself though :) I would make this again though... but it is sort of a lot of work peeling al of the zucchinis with a peeler. Tasty though.

This was an "ok" recipe... I used turkey meat instead of beef, and tomato sauce instead of ketchup. Perhaps thats why it was just ok. It tasted kind of bland to me. I think if I make this again I will try to spice it up a bit more... for me it just wasn't tasty enough.

White Bean Soup

We really enjoyed this soup. I followed some of the other suggestions, added spinach and some potatoes. I also did not add half of the soup to the food processor, I just left it all un-processed. Also added were some butter beans and white kidney beans. Very tasty.

Tomato-Curry Lentil Stew

This was a pretty good recipe... very easy to make and healthy. I think if I were to make it again I would use less celery (I am not a huge celery fan), and perhaps add some carrots and more tomatoes. I did enjoy this recipe though.

Slow Cooker Chicken and Dumplings

This recipe was very good. We added 2 cans of carrots and peas and were glad we added the vegetables. I probably cooked the dumplings in the slow cooker for about an hour, not a half hour. I would definitely make this again.

Peanut Butter Noodles

This recipe was pretty good. I made it as described. The one thing I wish is that I had chopped my ginger a bit finer. The chunks were too big and when I got a bite of the ginger it was a bit much. I think if I make this again I'll wither do a better job of chopping it or put it in a small food processor to get it extremely fine.

Spiced Pumpkin Seeds

These pumpkin seeds were pretty good! I had to cook mine for a bit longer than an hour, more like an hour and a half. At about an hour, they were still a bit soggy, so at an hour I increased the temperature to 300 and cooked for about 30 minutes more. They came out pretty tasty.

This recipe was really good. It was flavorful and aromatic. I especially enjoyed the cinnamon/spice flavor. It is definitely different than many other soups that I've made, and definitely something I'd make again.

Chili-Lime Chicken Kabobs

This recipe was pretty good. I grilled up the chicken with some green bell peppers, onions, and tomatoes, and marinated overnight. I would have been happier if the chicken had a bit more of a lime flavor. Perhaps next time I'll double the amount of lime, and maybe add extra cayenne pepper for a bit more kick.

This was a good recipe for margaritas.... I think the tequila you use makes quite a bit of difference. We use some middle of the road tequila and if we had used some better stuff it would have came out even better.

Baked French Fries I

These fries were good, but I was hoping the seasoning would have just a little bit more flavor. I will probably make these again, but will perhaps add some additional spices, maybe some cayenne pepper or cajun seasoning to add a little bit of kick. Also, I felt that the fries could have used a touch of salt. All in all, these are far better than fried french fries, or store-bought frozen ones.

Spaghetti Sauce II

This sauce was extremely tasty, far better than what you would get in the jar. I followed this recipe as written except that I added a finely chopped red bell pepper and about 1.5 cups of finely chopped mushrooms. I also used italian spiced ground turkey meat in leu of the sausage. We put the sauce on whole wheat fettucini, and it was probably the best pasta I've ever made at home.

Fast and Friendly Meatballs

I love this meatball recipe. I have made it several times and used it with pasta and also for meatball sub sandwiches. I tend to add chopped onion into the mix of my meatballs, and they always turn out great.

Slow Cooker Chicken Taco Soup

I really liked this recipe. I made it as described, except I just cut the chicken breasts into small chunks and left it in the entire time. The soup had a bit of a spicy kick to it which I liked, and made the house small great. I probably wouldn't change anything if I made it again.
