Wake-Up Casserole

Truly delicious! Made a few changes: 1) Used 10 Trader Joe's hasbrowns (all that came in the package), which fit perfectly in my casserole dish. Browned these in the oven for 15 minutes the night before making the casserole. 2) Used turkey sausage (Jennie O), cut up into chunks and browned the night before, using Yoshida's sauce (which added a sweet/salty flavor to the meat, found at Costco). 3) Also used 4 pieces of bacon, which I made the night before as well. Once browned, cut the bacon into small pieces, which added to the flavor of the casserole. 4) Assembled the hashbrowns, meat, cheese in the pan the night before. 5) The next morning, used 10 eggs plus 2 egg whites, 1.5 cups milk, salt, pepper, Lawry's salt. Didn't used ground mustard as I didn't have that on hand. Served with mini croissants and fruit - a perfect brunch food to serve to company!

Dog Food Dip

This was really good. Made it for a party as part of a "nacho bar," where I set out the dip in a crock pot, along with tortilla chips, salsa, guacamole, sour cream, olives, limes, etc. It was a total hit! I did make some minor adjustments - while cooking the meat, I added salt, pepper, garlic, and some yoshida's sauce. Also, I used all the same measurements in the recipe, except for the cheese - I used 2 lbs. (instead of one). This made the dip "cheesier" and less thick, which worked for the nacho bar. Can't wait to make this again!

Perfect Pumpkin Pie

Delicious! This is an easy tip and makes a big difference in taste - in a medium pan over low heat, heat up the canned pumpkin puree, spices, and salt. Heating the pumpkin puree up takes out the "canned" taste of the pumpkin and melds the spices together nicely. Then, pour the mixture out into another bowl, and let it cool a bit before adding the condensed milk and eggs. This little change makes the pumpkin taste much fresher! My family loves this recipe, and I use a ready-made graham cracker crust, so easy and so good!

Caramel Popcorn

Absolutely addictive and delicious! I used a large tinfoil roasting pan (sprayed with pam) to mix and bake the popcorn in one big batch. Also, if you want to add peanuts, add them the last 15 minutes of baking so that the nuts don't burn. Wonderful recipe - I brought some to work and everyone raved about it and asked for the recipe.

Apple Orchard Punch

I made this punch last night for a holiday party, and it was an absolute hit! I doubled the recipe and it was completely gone by the end of the night. Everyone raved about the punch, and ate the apple slices too - a definite keeper, and it's so pretty too!

Slow Cooker Chicken and Dumplings

This was easy and delicious! My husband loved it as well. I made a few changes - I added a pouch of Lipton onion soup mix and used water so it wouldn't be too salty. Also, I used 10 frozen chicken tenderloins instead of breasts, and it came out great. Half an hour before serving, I added cooked, cubed potatoes and carrots, along with broccoli and canned corn. Baked the biscuits and poured the mixture over them - yum!

Awesome Slow Cooker Pot Roast

My husband and I loved this. I used beef broth instead of water, and added three whole garlic cloves (for a 3 1/2 pound rump roast). I followed the recipe amounts and there was plenty of gravy leftover. At the last hour of cooking I added "stewed vegetables." (They can be found in the freezer aisle of the grocery store, and have pre-cut carrots, pearl onions, celery, and potatoes - a definite time saver.) Before putting the veggies in, I boiled water and stuck the frozen veggies in to make sure they were hot when adding to the roast/crock pot. Delicious, quick, and easy!

Banana Cake VI

This cake was delicious! I didn't have ingredients on hand to make the frosting - and the cake tastes fine without the frosting. Also, instead of using buttermilk I used non-fat milk, and the cake came out great, very moist and has a lighter texture than banana bread, heavier texture than cake. Great cake!

Smoked Salmon and Egg Salad

This was delicious! I've made it twice, and both times people raved about it and asked for the recipe. The first time I used canned salmon, and the second time I used fresh salmon that I first baked. I've used this to make afternoon tea sandwiches, and they were a hit. My husband really enjoyed it, too - thanks for the recipe Donna!

Baked Ziti I

This dish was excellent, thanks Colleen for sharing! My husband and I loved it, and the combination of cheeses was delicious. Very easy and simple to make - I substituted ground turkey for the beef, and used low-fat sour cream, and it came out wonderful!

Chicken Marsala
