Candy Corn Bark

AMAZING! On top of wax paper I put cranberries, salted peanuts, cashews, and broken up pretzels. I poured the white chocolate over it all and put a few orange & black M&Ms, halloween sprinkles and a few candy corns - for decoration. I stuck it in the freezer and when it was cooled, I peeled off the wax paper and poured another layer of milk chocolate on the bottom to fill in some of the "voids". I will be doing this for Christmas too!!!

I also made these with white and milk chocolate. They came out lovely but I think next time I will just stick to the white chocolate - the sprinkles stand out more! Will be doing these again for christmas!!

Game Day Hamburgers

AMAZING!! First, I shredded a potato and fried it along with some mushrooms and a little bit of garlic. I added bread crumbs, an egg, worchestershire sauce and onion powder mix to the ground beef. I did the layered patty as opposed to the stuffed patty and MAN was it good!

Chocolate Chip Banana Bread II

I doubled the recipe and used 12 bananas. I used equal parts butter and apple sauce instead of shortening. I also used equal parts white and brown sugar. And I used 1.5 cups of choc chips (as opposed to 2 cups because I doubled the recipe). I left out the walnuts. Shared with family and friends. Everyone enjoyed it!

Easter Egg Dipper Treats™

These were so cute and so fun to make!! Make sure to butter up your hands nice and good when shaping the eggs, the cereal mixture is SUPER sticky. The chocolate mixture got "sugary" as we were melting it down. Maybe it was because we used butter instead of shortening or milk chocolate chips instead of semi sweet??? I personally found the chocolate & sprinkles to be a little too sweet.. however my parents & aunts and uncles devoured them!! I look forward to making them again next Easter!!!

Romaine Rice Tuna Salad

Sooooo good!!!! I mixed spring greens and spinache with the carrot and used left over basmati rice. I threw some feta on top so I did't add the salt that it asked for. So good. So so good.

Cinnamon-Curry Tuna Salad

Wow. This was a total surprise. I was throwing in the ingredients, worried that it was going to be a total flop. Flop it wasn't, dry it was. I threw in more mayo (well, whipped dressing), more mustard (I only had honey mustard), more lemon juice and more relish and served it on crackers. As others have said, the first bite was weird, but the more you ate, the better it got! It was DELICIOUS!!!!

Zesty Slow Cooker Chicken Barbecue

I used a single thawed chicken breast. I cooked it on high for 3 hours, then shredded the chicken and cooked it for another half hour or so. It soaked up the rest of the sauce perfectly. I then saved the chicken for sandwiches the next day and it was delicious!

Orzo and Tomato Salad with Feta Cheese

I substituted cucumber for olives and also added a bit of whipped dressing to thicken up the dressing a bit. Was tasty but seemed to be missing something. Will try a dash of balsamic next time.

Chicken Salad Balsamic

Great for using up odds and ends in your fridge. Instead of walnuts I threw in a handful of unsalted trail mix. The baby spinache was a good addition as well.
