About this Cook
Christian, homeschooling SAHM. I like rich foods, but my weight prohibits me from endulging. My husband is very health-conscience, likes meat and vegetables and a hot meal 3x a day. He hates any white food (I just happen to love creamy dishes and cheese), so I am always looking for recipes that are a good compromise. We both try to eat high-protien, low-carb.
My favorite things to cook
Comfort foods, soups, stews, baked goods, etc. I try to prepare everything from scratch with fresh ingredients. I also love to experiment with Gluten-free, and sugar-free ingredients.
My favorite family cooking traditions
Big pots of hearty chili that lasts all week. Homemade almond roca at Christmas. Peanut butter anything.
My cooking triumphs
A birthday cake that I made for my husband's 95-year old grandmother. It was Martha's meyer lemon cake recipe and it took me a total of 26 hours to make and decorate. It was beautiful and delicious!
My cooking tragedies
I spent 2 days making Bœuf bourguignon for a dinner party. When it was almost done I went to take a shower, left my husband in charge, and the bottom of the pot burned. I was able to (barely) save it by pouring it into another pot without stirring. My plan was serve it in ramekins with a smashed potato topping, put under the broiler for a few minutes to brown the tops of the potatoes. This didnt work. The potatoes made the stew spill over the edges, and THEN the potatoes burned. Messy and ugly presentation (but everyone said it tasted it good)!

Pecan Pie V
Not sure if I did something wrong, but this turned out very dry for me. The flavor was good, and I actually preferred the texture over a traditional gooey pecan pie. I could eat it while holding the pie piece, rather than with a fork, so it was more like a bar. Followed the cooking advice of other reviewers: start at 350, reducing to 300. Worked out great.

Fast and Friendly Meatballs
I used crushed cheetos instead of bread crumbs because I was trying to get my kids to eat them. They loved them! I added a splash of beef broth and olive oil to the meat because I was worried they wouldn't be moist enough. They turned out awesome. Can't wait to make them again for the grown ups!
