Eggplant Casserole

I did not care for this. Made recipe as is and turned out to be soggy and very egg tasting. Will not be making again. Also, used pan recommended and found that the recipe had no depth. You either need a smaller pan or to double it up.

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

Excellent dish! To simplify I just used store bought pesto and it worked beautifully!

Fluffy Carrot Muffins with Cream Cheese Frosting

This makes the best tasting carrot cake ever! The cream cheese icing is a nice addition as well! The recipie was super easy (I made it as a cake as opposed to muffins) I made it twice and everyone loved it each time!
