Suki's Spinach and Feta Pasta
Delicious! Suggestions: Definitely add Kalamata olives. Such an important flavor to add punch. I also cooked the mushrooms separately in red wine to make them more tender and to add flavor before combining them with everything else. I do agree with more spinach. And canned diced tomatoes were totally fine because so much of the rest of it tasted very fresh and the tomatoes become more of a sauce anyway. This was easy but was praised for both taste and presentation. Serve with a greek salad and drink some red wine for a fantastic evening :)

Olive and Feta Pasta
STRONGLY recommend substituting artichoke hearts for the zucchini! We got one small jar of the marinated artichoke hearts, and one can of plain ones (cheaper) then mixed them together...there was definitely enough marinade from the small jar to completely soak the regular ones as well as the entire dish! I can't imagine this dish without the artichoke flavoring- it made it! my picky bf loved it as much- if not more- than me. we used lots of pasta and it lasted several meals. YUM!
