Nacho Cheese Sauce

A little too grainy for me. I'll cut back on the flour and add more cheese next time. I used colby-jack cheese instead. Sorry, I don't eat American cheese.

Fiery Fish Tacos with Crunchy Corn Salsa

This was really simple. I baked the fish because my grill is out of service in February. The corn salsa is great. I wish I had some sour cream, that would have been really good, I think.

Jesse's Easy Guacamole

You want guacamole quick, this is what you make. It's simple, and tasty. I like to put the lime juice in the bowl first, then do the avocados, the garlic, and smash it up using a potato masher. Then I add the salt, stir some more and try it. This recipe may look like it "needs" something, but I've made it at many a party, and it's usually the first item to be GONE. Fresh ingredients are the secret.

Salmon Chowder

Instead of 2 cans of salmon, I used the frozen package of 3 salmon filets that had been in the freezer for like 6 months. Also, not sure about the amounts in cups, but I used 2 celery stalks, 3 potatoes, one onion, and probably like 2 or 2.5 tsp of dill weed. Our dill weed is like 100 years old, so it never gets used. Baked and flaked the salmon. There were some awesome-sized chunks in there. It was even better the next day.

Chicken Chili

I didn't add the mushrooms. I added about a quarter cup salsa verde, and 2 chopped up green onions and some cilantro after the boil. A nice, hearty recipe.

Easy Red Beans and Rice

It may not be traditional, but whatever. Kielbasa is okay, but you can find different kinds of Andouille sausage in grocery stores, even up here in NW Indiana. I used red beans I cooked in my InstaPot as well as brown rice from there. This is a nice, easy staple dinner.
