Honey Balsamic Vinaigrette

Easy Apple Rhubarb Jam

We made several jams last year but this was the winner. It's a lot like apple pie filling and that's what I love about it. It was easy to make and tasted superb!

Beer Braised Irish Stew and Colcannon

This stew is grand! I have made many stews so far but they always seemed to be missing something. This stew however embodied the flavors I expect of a stew...full rich and savory! I doubled the carrots and onions and took a German Schwarzbier instead of a Guinness to give the stew a little more body....it was sublime! So good that it would make a good low budget Christmas dinner!

Roasted Sweet Potatoes & Onions

Made this tonight and it was superb. My boyfriend had yams before and wasn't too fond of them but he really enjoyed this recipe. I was worried the amaretto would become overpowering but it was nice and subtle. The almonds just finish the recipe off. Yum!

The Best Thai Coconut Soup

Very tasty! Boiled down 3 chicken legs and made the stock for the soup. I used the meat from the chicken legs instead of the shrimps. Added an extra spoon of curry for a little stronger flavor. Because I wanted the soup to be for dinner I added some mungbean sprouts and spinach at the last minute for a more filled soup. I took the lemongrass out before serving but I think I will leave it in next time. Definitely worth making again.

Homemade Egg Bread

Great bread and easy to make. The flavor reminded me a bit of the German Pretzel Bread (Laugenstange). I was to lazy to throw the bread in the oven so I made it completely in the bread machine.
