Moroccan-Style Stuffed Acorn Squash

This recipe is a great idea. I did not follow it exactly, as I didn't have most ingredients on hand. But I took the idea and ran with it...and the husband says it gets put in the top 10! I baked the squash...but then while it baked I started cooking veggies in the pan (I only used bell peppers, garlic, and onion). I actually only sauteed them for a few minutes, knowing the chicken broth would soften them. I added drained black beans and spices plus chipotle pepper, then used quinoa instead of couscous (again...this is the stuff I had on hand). Took a little longer than couscous to soak the broth up. Once done I added cooked chicken to the mixture (which you certainly don't need for added protein) and stuffed the squash. Great idea for me to run with!! I can't wait to try the actual recipe!!

Eggplant Mixed Grill

The flavor of this marinade was great, my husband and I really enjoyed it!! I'm not sure if my veggies were larger than normal...but I doubled the recipe for the marinade and it still wasn't 'juicy' in the bag. Either way it turned out excellent...I served it with quinoa

Easy Egg and Avocado Breakfast Burrito

Great recipe, although I did not follow exactly. Was looking for a breakfast idea with this came up and was the perfect starting point. I did my scramble the way I normally do (salt, pepper, and a random spice; essence or tumeric...anything that will give it a little extra something). Browned the tortillas, once on the second side I put goat cheeese and let it soften while browning the tortilla. Removed from heat, added thinly sliced avocado, then the scrambled eggs and that was it. Cottage cheese and ketchup did not seem right with this. But I didn't try it. Thanks for the idea, we really enjoyed this!!

Baby Carrots with Dill Butter

Simple, wonderful dish to add a healthy aspect to your meal. Although I did not measure the lemon juice I used, after adding the salt and pepper (to taste), I noticed the lemon flavor was not as strong...many above mention too much lemon, so maybe try balancing it with the salt and pepper.
