I've always enjoyed cooking *(or trying to!) but its tough when you're single since most recipes are for at least 2or more people. I've been in a great relationship for a year and a half now, so I try all kinds of recipes I would have been nervous to experiment with. Luckily my boyfriend is very supportive and will try anything!
My favorite things to cook
I love my homemade beef stew, and meatloaf is a quick easy favorite for the cold Chicago winters!
My cooking tragedies
I decided to change my favorite beef stew recipe. A friend recommended I use Guiness instead of beef broth, problem was, I still used all the usual ingrediants & spices. Guiness doesnt mix well with certain things *(like sherry cooking wine), so the stew was practically inedible! I learned my lesson, ask detailed questions when someone recommends a change to YOUR recipe!!

Chicken, Rice, and Green Bean Casserole
Great recipe, like other reviews, I made a few changes. I used chicken thighs that I baked (I'm not good at frying)sour cream (just because I did not have mayo on hand) I also added a handful of shredded cheddar to the mix, and sprinkled top lightly with shredded cheddar and crushed seasoned croutons. Also, I used frozen green beans that I did not cook before hand. This gave it a nice texture. Next time I may try adding broccoli as that would be a nice addition with the cheese. My 3year old twins and husband loved it, I will deffinately be making this one again!

Irish Tea Cake
Made this for a family St Patrick's Day dinner. It was a HUGE hit! I followed directions, and beat sugar & butter for about 10 minutes, added just a tad more milk (maybe 1 or 2 T) and was sure to add flour & milk alternately ... used Pam Baking spray on the pan. Turned out great ... took a little more than 35 mins to cook, but that could be my own oven. This one is a keeper, I highly recommend!

Easy Turkey Tetrazzini
I give this 5 stars after my slight changes. As recommended by others, I sauted some mushrooms (i only had a jar on hand) and onions in 4Tbs butter seasoned with garlic salt & pepper. . I used 1 can condensed cream of chicken soup & 1 can condensed cream of celery soup.Then mixed in a 16oz container of sour cream. 2 C diced turkey. I also used cellentani (corkscrew) pasta. Mixed sauce & pasta put in baking dish & sprinkled bread crumbs & parmesan cheese. Baked 30min on 350. Turned out great! Next time will add frozen peas (just because I like them!)
