About this Cook
I am a mother of five who enjoys almost everything to do in the kitchen but the cleanup :). There are very few things I have not tried at one time of another to cook or bake. I am willing to try and attempt most anything. I really enjoy cooking with my husband and the kids are starting to get into it too.
My favorite things to cook
I enjoy cooking just about everything. The one thing I probably like the least to do is frying but only because it is so time consuming and MESSY, but mmmm it tastes good. I like an entertaining style of cooking: lots of food and displayed prettily.
My favorite family cooking traditions
We usually always try to have a theme meal at least one day a week. We have done Taco Tuesday's and Pizza Friday's as often as we can and the kids are always upset if we don't have the time or ingredients on those days.
My cooking triumphs
The first time I made Thanksgiving dinner for my family was probably the most fun thing I did. I had never realized how much work grandma had put into those meals until then. Making sure everything got done in the right order, keeping stuff warm that needed to be warm and cold that needed to be cold, trying to find space on the stove top and in the oven to get everything prepared. I really don't think I will ever know how she did it for us before microwaves became popular :)
My cooking tragedies
I have forgotten many a pot in my cooking days. I remember well the time I forgot that I had started rice on the stove and I walked out of the house to help my mom with some chores. When I did remember about it I ran back up to a house filled with smoke, which I hurriedly ran and opened all the windows and threw the pot outside to clear. Of course there was also the time that my friend and I tried to make an angel food cake without a mixer, which I am sure IS possible if one you have ever made angel food cake before or if you are older and stronger that a couple of 11 year-olds. :)

Baked-Bottom Nanaimo Bars
Ok so this was DELISH!! I rated it a 4 only because I modified it for what I had on hand. I didn't have any nuts and really don't care for coconuts so I just added an extra 1/2 cup of graham cracker crumbs to the crust. an I only had the small boxes of pudding on hand so I just used two (actually one French Vanilla and one Banana Creme was yummy!) and then added another 1/2 cup milk. I also made this in a 8x12 glass dish and it turned out perfect. There is enough butter in it that I did not grease the dish and it still cut and served just fine. I will DEFINITELY make this again!! I can see my daughter who does not enjoy cake requesting this as the new birthday treat!!!

World's Best Vegan Pancakes
I only rated this at a 4 because I changed it, I had 8 kids over this morning and they flew off like hot cakes!!!! :)We are not vegan but I was looking for a quick pancake recipe that used self-rising flour (all I had on hand) and was easy. I did use the pudding mix as that is what I had on hand and I doubled the milk though I probably could have added more as they were still very very fluffy. They are very good and I will add this to our breakfast rotation for sure!!! Very very yummy. *16 hands up (for more:)!! ) *
