Sensational Slow Cooked Beef Brisket

I liked the flavors a lot, and the cayenne spiced it up just right, but did think it was too salty --- I will probably cut the salt in half at least, maybe more. Otherwise the meat came out great --- moist and really flavorful. Will definitely try again!

Bacon Wrapped Water Chestnuts II

Always a hit! Although some disagree, I think thick bacon is a must, but I pre-cook it a bit in the microwave so it removes some fat and reduces oven cooking time. You can reduce the sugar for less sweetness. Really, you could pop 10 of these in your mouth without thinking, they are so YUM.

Charleston Breakfast Casserole

This was delicious! The flavor was terrific. I used chopped ham instead of bacon because I was already serving bacon as a side. I just used about a half pound of deluxe deli ham, chopped up. I increased the eggs to about 10 and increased the milk by about 1/4 cup. Assembled the night before, and it was still runny in the center after the baking time, so I stuck it back in for about 15 minutes to finish. There was some grease on top when I took it out, so I absorbed the excess with a paper towel, then sprinkled a little shredded cheddar on top. I have tried many egg casseroles for Christmas brunch, and this is my new favorite!

Warm Crab Parmesan Dip

Excellent! This gets so many compliments every time I make it. I do use much more crab (a 16 oz can of lump crabmeat instead of 6 oz), but keep all other ingredients the same. I believe Hellman's mayo is a must. If there is any leftover, try it cold, it's fantastic.

Artichoke Dip I

This was so easy and so good -- EVERYONE asked for the recipe. I used artichoke hearts in water instead of oil, and used a mozzarella/provolone shredded blend along with fresh shaved parmesan. I added minced garlic and some chopped roasted peppers. REALLY GOOD!!!

Texas Caviar with Avocado

Hi, I posted this recipe...just wanted to add, I use WishBone Italian dressing and also black beans which can substitute for the black-eyed peas (I usually do one of each if I can, but sometimes the black-eyed peas are hard to find). This is ALWAYS a huge hit, people ask me over and over to make it, you can adjust the spice level and even kids love it!

Sugar Cookie Icing

Very easy to work with, dries nice and firm so you can stack cookies. While it is sweet, you only need a thin layer on the cookie.

Garlic Green Beans

I made this for Thanksgiving, everyone loved it. I cut down on the garlic a bit, but only because I was serving a large crowd and was trying to please everyone. A nice, simple tasty dish.

Broiled Scallops

I have made this several times, it is always a hit, and definitely as good as restaurant scallops. My kids are very picky when it comes to seafood, but I am sure any seafood-eating kids would love this.

Crab Stuffed Flounder

This is AWESOME! My kids, who NEVER eat any kind of seafood, insisted they wouldn't like it. I made them try a bite and they ate it all and asked for more. I omitted the cracker crumbs from the crab mixture, and added garlic powder. Even the leftovers were delicious the next day!

Garbanzo Stir-Fry

This is one of the best zuchini dishes I have ever had. I used onions instead of mushrooms, and canned tomatoes instead of fresh. We sprinkled grated parmesan on it at the table, but it was just as good without. I also added a little salt. Great recipe!!!

Burgundy Pork Tenderloin

This was delicious! I will definitely make again, especially since it was so easy. My only change will be to use less pepper (I loved it as is, but 2 out of 3 kids felt it was too spicy).

Oh So Tender Brisket

This was excellent! My husband raved! I used a covered roasting pan instead of the oven bag and omitted the flour. Also, I used beefy onion soup mix. The liquid smoke adds great flavor, we will definitely make this again and again!
