Easy Hawaiian Chicken Packets

Great, simple recipe, especially for summer. I used 3/4 of a fresh pineapple instead of canned, an orange, red, and green bell, and one onion. I forgot the teriyaki, but it was still delicious. Instead of making grill packets, I threw the veggies and fruit in my cast iron skillet and covered with foil, and grilled the chix separate. The veggie mix cooked in 30 mins. Served it over rice. Like I said, great summer recipe. Nice and fresh! Next time I will try to remember the teriyaki!

Key West Chicken

This was a really delicious marinade. Thanks for sharing it. I don't typically follow measurements, and I know I used more of everything than the recipe called for. I marinated it for the prescribed 30 minutes and it turned out very flavorful - no need to bother marinating overnight. Served with grilled garlic/olive oil/pepper-seasoned zucchini and yellow squash and everyone loved it. Great healthy dinner. I will have the leftover chicken in a salad tomorrow for lunch!

Butternut Squash Soup with a Kick

I've never had butternut squash soup, and I LOVED this! I added a whole, large, very hot jalapeno to it. Even my 10 month old loved it and ate it right up!

Cuban Shredded Pork

Great in burritos alongside black beans, cheese, greens, sauteed onions and peppers, and mexican or spanish rice. I usually add a little lime juice directly to the meat AFTER cooking just to give some more limey zing!

Jambalaya

FAN-TASTIC! Used olive oil instead of peanut oil and sauteed the andouille with the veggies since it was precooked. Added some frozen shredded chicken. Used some frozen homegrown tomatoes and added some (very) spicy salsa since I didn't have enough tomatoes or any hot pepper sauce. Didn't have file powder and it turned out great anyway. Used long-grain brown rice cooked for 20 mins separately, and then I added to jambalaya and simmered for another 20 since it was the long cook kind of rice. My husband said it was some of the best jambalaya he's had in a very long time.

French Bread

This bread turned out fabulously on my first try. Though many people said to use 5 cups of flour, I ended up needing almost the whole 6. I did add an extra 1/2 tsp of salt (but I didn't measure). Also, I used my bread hook the WHOLE time and didn't bother hand mixing and kneading. The bread rose BEAUTIFULLY the first time, and not as much the second time. Didn't have eggs, so I didn't make a wash and it was still amazing looking. The bread was soft and tasty and I didn't think it was too dense at all. After it was done, I made garlic butter and spread it over the loaves. We ate 1/2 of a loaf and I froze the rest for later. Hope it "re-bakes" okay!

Absolutely delicious. I didn't have any cream so I just used whole milk. Thickened up so fast I had to take it off the stove -- only took about 30 seconds! Thanks for sharing!

Cream Cheese Mints

Note - I used reduced fat cream cheese and these barely turned out at all. They tasted great, but couldn't hold they're shape for very long, so I suspect the cream cheese was the issue.

Simple Baked Apples

This was pretty good. I added about 1/2 cup to 3/4 cup of oats to it (I don't measure) and I used dried cranberries instead of raisins. It was great on a chilly fall night following some squash soup!
