Fish Fillets Italiano

Very easy and very good! I used basa instead of cod since that's what I had on hand. I also used chicken broth instead of white wine and added salt, pepper and italian seasoning.

Taco Dip I

Vera Cruz Tomatoes

I wasn't impressed at all. The ingredients sounded really good, the sauce tasted good before the tomatoes were stuffed, and they looked really pretty, but the end product was just mushy blah. My husband said they were ok and didn't even finish 1/2 of one. I thought this would have been the perfect side to a steak and foccoccia bread but it just didn't turn out that way.

Portobello Mushroom Burgers

These were very good! I served them with provolone cheese, grilled red onions, and fresh sliced roma tomatoes. I brushed a kaiser bun with butter and grilled the bun too. The burger did not need any type of mayo/mustard/etc...due to the marinade having so much flavor. I was out of italian seasoning or any type of basil/oregano so I used a rosemary and garlic seasoning I bought at Sams Club.

Butter Bean Burgers

These were ok. They really needed more salt than I put in and something else since they were kind of bland. When I make these again I'll add more garlic powder, salt, and then maybe some onion powder.

BBQ Chicken Calzones

We loved this! Instead of cutting the dough in half, I cut it into four sections which made perfect leftovers for lunch. (You can also adjust each pockets ingredients this way for those picky eaters) I didn't have bacon, but I will absolutely make this again adding it...and maybe even some cracked red pepper. This is a perfect alternative to the basic bbq chicken pizza.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

This turned out ok. I used flank steak rather than pork, which picked up the soy sauce marinade very well. For some reason the sauce wouldn't thicken up as much as I thought it should so it was a bit runny. My husband loved it though!

BBQ Beer Brat Kabobs

Great summer dinner! I did change a couple things though - I used regular bratwurst since that's what I had on hand, I used Sweet Baby Rays Original BBQ sauce, and I put each type of veggie/meat on it's own skewer to allow for more even cooking. I served them with grilled corn on the cob. Everything was so colorful and tasty!

Bacon Wrapped Water Chestnuts III

These were ok. I cooked them extra long at first to make sure they were crispy. Then I only used 1/2 the sauce since I just wanted them slightly coated. The flavor seemed like it was missing something.

Baked Paprika-Parmesan Chicken

This was wonderful!! I followed the recipe exactly, except for the cooking time - It only needed to be cooked for 50 min. It smelled up the house and was some of the best baked chicken that I've had in a long time!

Roasted Chickpeas

WONDERFUL HEALTHY SNACK!! These reminded me of corn nuts and I love corn nuts! I did follow one of the other reviews and dry roasted them. I didn't use any oil or seasoning at first, then baked them at 450 for 30 min. I took them out and 1/2 - seasoned with cajun seasoning and the other 1/2 seasoned with a couple TBL of ranch mix. They started to get soft, so I put them back in the oven for about another 15-20 min. I shook them the entire time I cooked them about every 7-10 min so they wouldn't burn. They turned out really crispy. I will add these to my regular snack menu since they are so healthy and great tasting!!

BBQ Chicken Pizza

GREAT GREAT GREAT!! I have been looking for a similar recipe to Macaroni Grill's BBQ Chicken pizza and this is pretty close. I did make some changes though: I didn't have any spicy bbq sauce, so I mixed 1/2 cup KC Masterpiece original sauce w/ 1 Tbl Franks hot sauce. I also seasoned the chicken w/ onion powder, salt, and pepper, then grilled it and diced it and mixed it with about 1 Tbl of regular sauce just to get it a little coated. I layered the pizza as such: sauce, cilantro (which I won't use next time-a little over-whelming) 1/3 of the onions, chicken, cheese, then the rest of the onions. I didn't use the peppers-I set those out if anyone wanted them after the pizza was cooked. This will definitely go on the regular menu!

Burrito Pie

This was pretty good. I followed some of the other reviews and used taco seasoning instead of sauce and then spread the beans on the tortillas (face down) instead of mixing with the meat. Next time I will layer 2 tortillas each time rather than one.

One Dish Chicken Bake

Good for a quick and easy meal. I added jarred mushrooms and seasoned the chicken first with poultry seasoning, onion powder, and sage. It turned out a little runny, so next time I will use less milk.

Chocolate Delight

This has always been my favorite cake. A woman that I work with gave me this recipe years ago, but called it a Kahlua Trifle and added a tad bit more Kahlua. Since then, I make this every chance that I get. It's so wonderful that I'm always asked to make it for every birthday, Thanksgiving, and XMas!! I always have made it the night before so all of the flavors can combine.

Veggie Pizza

I liked this recipe very much. I made it at night so it can chill in the refrigerator and be ready to pack for lunch tomorrow. (Great alternative to a sandwich!) I did make a few changes: didn't have dill, used a few different veggies that I had in the fridge, added a small amount of cheese, and used low fat cream cheese rather than regular. I will defininatly add this to the regular lunch menu!

All-Around Good Smoothie

I pretty much used this as a base and made a few substitutions. I doubled the batch and used the flax seed as directed, 1 cup 1% milk, 1 cup fat free vanilla yogart, 2 small bananas (and they were SMALL!) and 3 sliced nectarines. I froze the fruit the night before so it would be extra frothy. They were great and very filling! My husband didn't think he would like it, but he did! Next time I think I'll use a berry blend

Chicken Pot Pie VI

I kind of just used this as a template, but it still was the best pot pie ever!!! The changes I made were the following...I added about 1 tsp sage, 1/2 tsp poultry seasoning, instead of the frozen veggies-I added diced celery, carrots, & potatoes. I didn't add the cheese because my husband did not like the idea. The crust was also really doughy on the bottom layer, so next time I will follow the other reviews and bake the crust for 5-6 min, then add all the ingredients.
