Heavenly White Cake

Seriously the most amazing cake ever! It has that great birthday cake flavor that everyone loves. I make sure to sift all dry ingredients, used more milk, and made my meringue last. Amazing!

Cheese-Filled Ginger Bread

Pretty fantastic. It really is much more of a pound cake than a bread. I added 1/2 cup of butter to the cream cheese mix, and used cinnamon and clove instead of ginger. I also added a bit more milk to the batter. Only a bit of tweaking. My husband and I both loved it. Thanks!

Lemon Cake

This cake sounds fantastic, but mine was not. I followed every direction, every suggestion, and my cake was flat and hard. I'm even a baker (as my job)!!

Cantaloupe Crunch

This is so freakin' amazing! I was skeptical at first, but it just came out of the oven, and oh my!! It is on the (very) sweet side and as others have stated, does taste like peach cobbler. Would be great with cool whip or ice cream. Can't wait for the hubby to get home and try it.

Pumpkin Spice Cake II

Hands down the best cake ever!!! Followed others advice and used half the oil called for and replaced the rest with cinnamon applesauce. Added extra spices, and replaced the pecans with apples. I served this at a bday party and the look on peoples faces said it all. Will make this again and again!!!!

Wonderful Banana Cake

So Wonderful!!!! Used a white cake mix, 2 bananas, baking soda, and 1 tesp of vanilla extract. Preheated oven and baked for about 50 minutes. I checked it towards the end for doneness. I did ice the cake, but agree that with icing it is very sweet, would be delicious on its own. A winner!

Carrot Cake IV

SOOO Good! I made this in an 11 x 15 pan so I doubled the recipe. Also added 2 cups of carrots. Iced with cream cheese frosting and garnished with crushed walnuts and cinnamon. A keeper.

Easy Creamy Peppercorn Chicken

SO GOOD!! I absolutely love this kind of recipe; delightfully warming comfort food!! Followed recipe exactly, except that I browned the chicken first in a pan (like the flavor), and sliced some portobellas to add with onions. I will make this again and again! Thanks.

Mustard Crusted Tilapia

Overall, a yummy dish...after modification. First of all, I think cooking tilapia for 10 minutes is a bit too long. This is usually a very thin fish, and cooking to long makes it tough and rubbery. I cooked mine for about 7 minutes. then, after topping with paste and crumbs I broiled for 5 minutes. Nice and crisp without being over done. Second, the sauce as shown is far too spicy, tangy...mustardy. I added honey to mine (to taste); it cut some of the tang, and added a wonderful sweetness that paired nicely with the herbs. Also, make sure you're a fan of herb flavors before making this. I happen to love them, but for those who don't it can be too much. Good dish with modification.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

I just made these, and they are fantastic! I followed the recipe, without modification, and they were perfect. Center was slighty gooey as promised. As far as the sticking issue, if you spray your liners with a nonstick cooking spray there shouldn't be any issues. I cheated on the icing however. I bought a tub of whipped cream icing and mixed in a little peanut butter. Delish!!

Egg-Free Low-Fat Oatmeal Cookies

These cookies came out of the oven looking a hot mess, but they were delicious! The texture is very light and cakey; hard to believe that they are good for you. The only changes I made were using cinnamon applesauce, 1/2 cup of wheat flour and 1/2 cup of regular, and used cranberries as well as raisins. Really wonderful, thank you for sharing such a delicious, healthy cookie recipe!

Apple Glazed Pork Tenderloin

This dish was exceptional! Followed directions precisely, except I doubled apples, and we are not drinkers so I used apple juice instead of wine. Also, I didn't know whether to cover or not, so I covered first half and uncovered last half. An absolute keeper...A++++!!!!

Balsamic-Glazed Salmon Fillets

wonderful. I have been making this for quite a while. Always a hit. I use apple juice instead of wine, and add a bit more honey. I often times use Mahi for this glaze, perfect!! Yes, do not marinate. The vinegar will cook the fish!!!

Zucchini Risotto

this recipe is outstanding. i have never made risotto before, so like many others, i too was a bit intimidated. it was however very easy, and very delicious!! i added carrots and peas along with the zucchini and tomatoe. yummy, colorful, and good for you to boot. i even forgot to add the cheese and it was still one of the best dishes i have ever cooked!
