Jennie's Heavenly Slow Cooker Chicken

Reviewed: Jun. 12, 2011
Yummy! This was excellent. Couldn't find chive cream cheese, so I cooked onions and garlic in the butter before adding the salad dressing mix. Didn't have any wine, so I used a whole can of chicken broth. I poured the sauce over six chicken breast halves and still ended up with plenty of sauce to be had. I let it cook for about 8 hours on low. It was delicious and the chicken fell apart in your mouth. I served over rice and the sauce with it was fantastic! I'll try pasta next time. My husband cleaned his plate twice. You HAVE to try this recipe - you won't be disappointed!

Chantal's New York Cheesecake

Reviewed: May 29, 2012
This was an absolute hit. Everyone was raving about it - even days later! I made it exactly as directed, only to make it gluten-free, I substituted gluten-free cookies for the crust and used sweet rice flour in place of the all-purpose flour. I also used skim milk and it still turned out delicious. I did not use a water bath, and it still turned out perfect, so don't go through the trouble! A word of warning though, this cake rises like crazy! It was almost touching the top of my oven by the time I went to turn the oven off. Don't worry though, it sinks back down to normal as it cools. It comes out very thick and creamy. Don't look any further - this is it!!! Thanks for the great recipe, Taliesen!

Cake Mix Cookies VIII

Reviewed: Dec. 22, 2011
Five stars based on the rave reviews I received. I made these for Christmas, so I used dark chocolate fudge cake mix and mixed in a whole package of Nestle mint & dark chocolate chips. I followed other reviewers suggestions and added 2T of oil and 1t of vanilla; however, mine spread quite a bit in the oven and ended up pretty thin. Perhaps my butter was too soft? In any case, they looked pretty and smelled delicious and everyone told me they tasted great. I would definitely try this with gluten-free cake mix so I can eat it next time!

Savory Deviled Eggs

Reviewed: Nov. 28, 2011
WOW! These were absolutely amazing. Hands down the best deviled eggs I've ever had. I followed the recipe exactly, except I garnished with a sprinkle of dill weed as I didn't have dill sprigs. Not only are they delicious, but they're pretty too!

Brown Sugar Meatloaf

Reviewed: Nov. 21, 2011
I never thought I'd be giving a meatloaf recipe five stars!!! I was a bit apprehensive about this because of the brown sugar and ketchup on the bottom, but don't worry! The brown sugar melts and bubbles up around the loaf as it's cooking to form a delicious sweet glaze. Just be sure to use super lean ground beef. To make it gluten-free, we tried GF cracker crumbs in place of the saltines, but they didn't absorb much of anything - I'm still new to GF cooking. :) So we ended up adding a bunch of GF bread crumbs, which worked better. Despite those complications, the loaf had a very nice texture and was so surprisingly good! Hubby said he'd definitely have this again. If you have any doubts, just try it! You'll be so happy you did! Thanks for such a great recipe!

Paul's Pumpkin Bars

Reviewed: Oct. 31, 2011
OMG these turned out SO good! In hopes of making them more brownie-like, I only used 3 eggs and 1 teaspoon of baking powder. To help with the flavor, I used half white sugar and half brown (decreased it slightly to 1 1/2 cups) and used pumpkin pie spice instead of cinnamon. These are phenomenal. They're so moist and delicious. Oh, and the cream cheese frosting was perfect - don't mess with success! Make these now. Seriously.

Marshmallow Brownies

Reviewed: Jul. 31, 2011
Delicious! These were soft, gooey, moist, sweet, and so yummy. The butterscotch flavor wasn't too overwhelming and the marshmallows added that extra sticky sweet touch. I took a shortcut by microwaving the butterscotch chips and the butter in my mixing bowl rather than on the stove. I had a hard time combining them that way, but they ended up melting and combined with the dry ingredients just fine. I would definitely make these again!

Garlic Chicken

Reviewed: Jul. 23, 2011
Absolutely delicious! I made fresh breadcrumbs in my food processor and pulsed in the parmesan. The only change I made was adding some Italian seasonings, salt, and pepper to jazz up the breadcrumbs. I baked two lean breasts at 400 for 30 minutes and they were perfect. The breading was so delicious and perfectly golden. The chicken, despite being very lean, turned out extremely tender and juicy. It didn't taste greasy at all. This recipe is DEFINITELY a keeper! Thanks Carol!

Pumpkin Spiced and Iced Cookies

Reviewed: Oct. 29, 2010
These were so moist and soft and yummy! The chocolate chips and pumpkin complimented each other nicely! They almost have the consistency of a muffin....wonderful! I substituted half of the white sugar for brown sugar and omitted the nuts. I didn't have time to make the icing and they were still really tasty! Watch out - they barely spread at all in the oven, so don't make them too tall.

Chunky Potato Soup

Oh. My. God. Sooooo good. Perfect comfort food for the first cool day of the season. I've never made soup from scratch before and this was easier than I expected. Took a little while, but totally worth it. Reheats well too!

Coconut Cream Cake I

Reviewed: Jul. 24, 2010
My fiancee, the coconut lover, gives this five stars. This turned out beautiful: incredibly moist with a lovely light coconut flavor, but not too sweet. It baked perfectly in the oven in 30 minutes. I also had the dillema of not being able to find coconut cream, so I mixed together half a can of the sweetened condensed milk and a full can of coconut milk for the cream, and I made sure I only poked holes halfway through the cake. It took me a long time to whip the cream to the right consistency, but the end result was worth it. Added a bit of coconut extract to it and only half the sugar. I made it on a Wednesday night and it sat in the refrigerator until Friday night when I made the frosting, so everyone is right about it being better eating it cold and after letting it sit for a day or two before eating. Thanks for the great recipe!

5-Minute Guacamole

Reviewed: Mar. 18, 2010
Fantastic guac! I like it smooth and simple and this was perfect. The only change I made was adding some lime juice. This will be my go-to guac recipe from now on! Thanks!!! Tip: if you add a dollop of sour cream into the mix, it keeps it from going brown.

Pecan Pie V

Reviewed: Sep. 4, 2008
I made this for my daddy for his birthday. It's the first pie I ever made and it was so incredibly quick and easy! I followed the advice of other reviewers: I topped with halved pecans to make the top more appealing and reduced the cooking temp to 350 for 10 minutes then 300 until done. My crust did not burn at all and the pecans on top were nice and crunchy. My dad said it was absolutely fantastic and didn't even notice that there wasn't any corn syrup in it!

Caramel Apple Pork Chops

Reviewed: Sep. 4, 2008
EXCELLENT! I had never tried the combination of apples and pork, and I am glad I did! For the sake of convenience, I personalized the recipe just a bit and made everything in one large skillet. I rubbed the chops with chop spice, pan fried them in a dusting of olive oil, set them aside, then used the same pan to make the caramel apple sauce. I melted an entire stick of butter and sauteed half a sweet onion, chopped. Then I added the spices, two heaping spoonfuls of applesauce, and the apples. After the apples were tender, I placed the chops in the sauce while still on the stove for just a couple minutes to heat them back up. Then I served. Boy, was this a treat! My boyfriend said this was the best meal we've had! I highly recommend trying this!!!

Cheddar Biscuits

Reviewed: Sep. 22, 2010
These were amazing and super easy! I only had pancake and waffle mix on hand, not all-purpose baking mix, and I was so surprised at how great they still tasted. I can only imagine how awesome they will be when I use the proper ingredient! I used fancy shredded cheese instead of regular, which I think helped the consistency. Can't wait to make these again!

Pecan Pie Bars II

Reviewed: Nov. 12, 2010
These were delicious. Made them exactly as directed. Brought them to work and everyone gobbled them up and complimented me incessantly. A few tips: 1. Grease your pan really well - sides and bottom. 2. Pat the dough into the pan with a rubber spatula - it doesn't stick to the dough. 3. Let the cake part cool for at least 10-15 minutes before pouring on the gooey mixture. 3. When you take it out of the oven, the middle will still be liquidy. You cannot serve immediately. If you let it cool overnight, it'll be a little more solid (still gooey) and ready to cut in the morning. Wonderful Autumn treat. Thanks!

Citrus Chicken and Pepper Fajitas

Reviewed: Dec. 19, 2011
These turned out really well. I doubled the recipe - if you double the recipe, double all the ingredients but keep the onion and lime juice amounts the same. Don't worry, the lime flavor isn't overwhelming - it's actually quite delicious. My cook time was much longer than 20 minutes for a double batch, but I also wanted to give the lime juice time to reduce a little. Overall, a nice, tasty dish.

Chicken a la Creme

Reviewed: Oct. 18, 2011
This was incredibly delicious for something so quick and simple! I used two smaller chicken breasts instead of the tenderloins, and I added a bit of parmesan cheese and some garlic powder to the cream. I served the sauce over the chicken on a bed of brown rice and broccoli - it was delicious! My husband and I all but licked our plates clean. If you're serving more than two or three people, I'd suggest doubling the sauce. Yes, it's that yummy. :-) Thanks, Patty!
