Quinoa and Black Beans

Awesome! We left out the cilantro and also the cayenne since the kids don't like spicy food, but everyone in our family loved it. I never follow recipes to the letter, so I like this recipe due to the ability to adjust to taste. Next time I will make it with chicken broth and add diced tomatoes.

Best Strawberry Daiquiri

I don't like beer or wine so my husband makes these for me! We make them virgin for the kids, then add the rum at the end for the grown-ups. We always use some fresh and some frozen strawberries. I think he estimates the quantities according to taste, but does use this basic recipe every time. We need to come up with another name for them, though, because the kids have started telling people about how they love drinking strawberry daiquiris!

Chicken Florentine Casserole

Very good, but the recipe is much more complicated than it needs to be! I did not pre-cook the chicken (cut breasts in half), used fresh spinach and mushrooms, poured the sauce over it in a baking dish and it was excellent. I did not follow quantities on the spinach and mushrooms, either, but guessed at how much we actually would consume. The kids thought it looked gross but my husband and I loved it!

Peach Pie the Old Fashioned Two Crust Way

Yummy, but a homemade crust is the clincher. I made it with a lattice top (cut strips with a pizza cutter and a clean ruler to keep width equal and strips straight).

Creamy Tomato-Basil Soup

Great recipe! I use whatever is on hand...if I need to add canned tomatoes, that is what goes in the pot. I also don't strain it and usually guess on quantities, adding more basil to taste, etc. Very close to my favorite restaurant's soup.

Rosemary Red Potatoes

One of our favorites! However, I always use fresh rosemary, cube the potatoes instead of quarter and bake for at least 45 minutes to one hour. I also turn the potatoes midway.

Coconut-Cream Cheese Frosting

Yummy on a snowman-shaped coconut cake! I didn't add all of the coconut since it would have been overkill on the same flavor of cake. I had trouble saving the frosting for decorating...I could have eaten the whole bowl! SCRUMPTIOUS!!!

Baby Back Ribs

We have made this twice using both Bull's Eye and Sweet Baby Ray's (my preference). We slather sauce on a Costco pack of ribs, vac seal them separately and stick them in the freezer. That way all you have to do is pull them out the morning you plan to cook them and remember to put them in the oven three hours before dinner time! We followed the recipe (we did grill them at the end of 2 1/2 hrs baking) and they were absolutely delicious. I order ribs whenever we eat out, and these rival restaurant quality.

Slow Cooker Beef Stroganoff I

I gave this five stars because it is so easy and doesn't take a lot of time, but was delicious! I didn't use cream cheese, though, just sour cream. I did increase the sauce ingredients at other reviewers suggested and also added fresh mushrooms near the end. The kids weren't huge fans, so I gave them the meat separately (drained the "gravy") and noodles with butter and parmesan. I figured the sauce isn't exactly healthy anyway!

Red Raspberry Vinaigrette

Excellent! I made this for a family dinner and got rave reviews. The salad was spinach, feta, candied pecans, dried cherries and green apple. I used red wine vinegar. The dressing kept very well in the fridge. I made it again in reduced quantity (estimating the amounts) for a smaller dinner with the same wonderful results. So easy!
