Tofu Parmigiana

Froze the tofu. Dipped in beaten egg first, then coated with crushed crackers instead of bread crumbs. Absolutely fanstastic! This is a major winner!

Vegetarian Four Cheese Lasagna

It was pretty good. The 3 star rating was the time involved, even with all the short-cuts. The other part of the rating was the cost of the ingredients. I will say that I am probably biased bc I've had probably 15 different lasagnas, so my palate is kinda snobby.

Barbeque Seitan and Black Bean Burritos

I had never cooked with seitan before. Now I think I'll do it more often! One suggestion though, Use smaller tortillas. There was a little too much tortilla on the 10 in ones for my taste. I substituted 6 jalepenos for the habaneros, it was great!

Tofu Lasagna

It was pretty good. I doubled the filling/sauce recipe because, as others have noted, there simply wasn't enough. But I used a cup of lowfat cottage cheese to keep the saturated fat in check. The taste factor was pretty good, I added a little mace to help highlight the nutmeg. The texture left me a little wanting. It felt like it needed a bit more substance, perhaps some cashew pieces (I've had great success with those in other lasagna dishes). This would, however, be an ideal dish or base dish for someone desiring to incorporate more tofu (i.e. lowfat protein) into their diet. I would suggest the addition of spinach or other substancial fiber or protein.
