German Chicken

Sounds weird but it's a new family favorite. I'd suggest sticking with standard kraut (not Bavarian) or it could easily get too sweet. If using frozen chicken breast use the cooking directions on the package but layer as per the directions here. Excess barbecue sauce gives a mellow smoky sweet taste to the kraut. Drain the kraut first so you get a nice blend of flavors instead of a puddle.

Whole Wheat Oatmeal Bread

Over-rose and fell. Too much yeast. Possibly the author used salted butter and counted on the salt in most quick cook oatmeals to control the rise. I didn't have those sodium sources and my bread didn't work well. Good crust, nice flavor, but the measurements need tweaking.

Almond-Honey Wheat Bread

Worked beautifully in my machine. Rose well, stayed fresh, not too crumbly. This may be our new everyday bread. I did have to add an extra T of water at five minutes but I attribute that to weather, not a recipe flaw.

Orange Ginger Bread

It's not a bread machine recipe if I have to turn on the oven. Dumped it all in the breadmaker on whole wheat, 1.5 lb loaf, light crust. Added 1/4 cup water during kneading b/c the mix was too dry. Final result was still a bit dry. Texture about as expected for the flours (medium grainy). I don't understand why this recipe used all purpose instead of bread flour. Bread had a hint of sweetness, faint orange flavor, ginger undertones. Overall I'd say it was too mildly spiced to be a specialty bread and too flavored to be an all purpose bread. I won't be making this again.

Argentine Chimichurri Bread

An excellent base recipe that I'll use again. It wasn't nearly as spicy as some of the reviews led me to expect and I used 4 cloves through the press. Maybe my spices are too old. Sliced nicely, low crumb, still a good loaf after a few days. I used flax instead of wheat bran and didn't notice any ill effects on the bread.

Good but be careful with your mayo. Olive oil mayo makes for a slimy feeling in the mouth in this dish.

Moroccan Shabbat Fish

Subbed 2 cans tomatoes for the chopped and it worked quite well. Not a heavily flavored dish for the title "Moroccan" but it was tasty. I'll make it again but probably double the spices.

Chocolate Chip Almond Bread

This recipe did not work for me. Mix was way too dry. I had to add over 1/4 c water and it was still very thick. Also, I have a beep to add nuts and such and tried just adding the chips and nuts then. It works for other recipes but not this one! The mix was still too thick for them to distribute.

We make the easier version of this every Christmas. Skip the melting and the peanut butter and just sprinkle on the chocolate chips onto the coconut before baking.

i used 2 c Hodgson's Mill Almond Meal / Flour for the slivers and the cookies worked fine. The dough was a bit much for my hand mixer. Form balls because it does flatten some as it bakes even if chilled.

Banana Banana Bread

Very banana-y. Yum. Make sure you cook it at least an hour. Mine had an undercooked middle. I consider that user error rather than a recipe flaw.

Maple Oatmeal Bread

I used fake maple syrup and got little maple flavor. It rose very well for the amount of flour so I would not scale up to a 2lb loaf unless you want to overflow your machine. I added 1/4 c water early in the mixing because the loaf was so dry. 1/2 c chopped walnuts added a nice texture.

Mom's Rum Cake

It's good enough for cake from a box but I don't understand all the reviews calling it awesome. The rum in the mix isn't strong enough to really flavor the cake leaving all the rum taste concentrated in the glaze.

Golden Sweet Cornbread

Great. Soaking the cornmeal in the flour for ten minutes made it less gritty than most. Next time I'll cut back on the sugar a bit - this recipe has an almost carmelized top. I'll also up the oil a bit to combat crumbliness. Full lined muffin cups baked for 18 minutes was perfect.

Wasabi Pea Gnocchi

Blend the peas separately to avoid overworking the mix. These floated faster than my normal gnocchis and some were undercooked in the middle. If I made it again I'd at least double the spices but I'll be sticking with my classic gnocchi recipe for now.

Quick Gnocchi

Sauce is needed for this to be successful but it's a great non-dairy pasta alternative. I tossed a chunk of goat cheese in with the still hot gnocchi, tossed to coat, plated and drizzled with pesto. If my gnocchi weren't all such random sizes and shapes it would have been quite elegant.

Beef Samosas

Good, but a LOT of work. To make it a little easier I've also done this with instant potatoes, curry powder instead of all the individual spices, and baked inside biscuts from the tube instead of fried in phyllo.

Pesto Sauce

I cut back the oil to 3/4 c to avoid the floating slick most pestos have. I shouldn't have. The proportions on this recipe are just right.
