About this Cook
I like to try cooking anything ethnic, and I also like to learn how things are done the old-fashioned way. There are times when you just can't go wrong with a classic. I like to learn how to do things from scratch.
My favorite things to cook
Anything new. Lately, I have been making American style pies (largely thanks to the recipes on this site). Because you can't buy pre-made pie bases here in NZ, I've learned how to make them and it's surprisingly easy.
My favorite family cooking traditions
Christmas. There are always so many people, but when we're working together, it all seems to run smoothly! Every year is a triumph!
My cooking triumphs
This year I made the cake for my niece's second birthday in the shape of a teddy bear. I think my brother was even more impressed than the birthday girl, probably because he was eating it for a week!
My cooking tragedies
Once, when I was working in a cafe, I forgot to add the sugar to eight carrot cakes I was making at the same time. What a disaster! They came out of the oven like rocks! I was very lucky to have an understanding boss.

Stuffed Leg of Lamb with Balsamic-Fig-Basil Sauce
I simplified this recipe and substituted a couple of things I didn't have, but the whole thing turned out beautifully. A real winner.

Jo's Chicken Liver Pate
Although I skip the whole step with the milk and don't bother with the livers going in and out of the pan more than once, this pate is far superior to any I've made before. I've been taking it to parties over the last few months because after the first try all my friends requested it. A chef trained in classical French method told me it was the best she'd ever had. Thanks Jo!

Chocolate Decadence Cake II
This cake was fantastic. I made it for work and everyone loved it. I've been passing the recipe around because it was such a hit. I wasn't sure what 'cake' flour is so I used self-raising and I added some brandy to the chocolate while I was melting it. I cooked it in a ring-mould, filled it with chocolate mousse and topped it with a ganache icing.
