Colleen's Slow Cooker Jambalaya

Pretty tasty! I added some cooked rice and corn during the last 30 minutes, and used way less red pepper. Worked well in the crock pot.

Lemon Mushroom Herb Chicken

This is a really yummy recipe! I served it over angel hair pasta. I made few minor changes: I used less butter, used non-condensed soup & broth, added fresh mushrooms, only made 1/2 the flour mixture and used some of THAT to thicken the sauce up. Very good recipe. I would give it a 4.5 if they let me.

Chicken Pot Pie VIII

I love chicken pot pies and this one is yummy. I made a few changes for health or convenience sake and it worked beautifully. I used frozen pie crusts, reduced the butter in the sauce mixture by a few tablespoons and instead of cooking the mushrooms in yet more butter, I cooked them in some chicken stock. I advise you to pre-cook the potatoes (I did it with the chicken) and cut the carrots into small pieces or they won't soften up in 30 minutes. Add some more of your favorite veggies and enjoy!

Shredded Beef Enchiladas

This meat is the BEST. You can do a million different things with this recipe and they will all turn out well. I have tried chicken too and it turns out just as good as the beef. Try it, you'll like it.

Excellent! Yes, the cooking time is clearly off for the steaks...ours took about 9 minutes per side on medium high heat(it was a thick one.)

Spicy Fisherman's Pie

Super yummy! Everyone ate it up. I added spinach, peas and 2 cloves of garlic, and also subbed a very small amount of grated parmesan for the cheddar, and red pepper flakes & paprika for the chili powder. I made the potatoes very dry so mine was not soupy in the least. Delicious!

Bacon Mushroom Swiss Meatloaf

This was awesome! I changed a few small things: I used 1 lb ground beef and 1/2 lb mild Italian sausage, subbed mushroom gravy for the evaporated milk, subbed bread crumbs for the corn flakes and added a couple of cloves of minced garlic to the onion & mushroom saute...Oh, and I left off the cheese and bacon on top...It was delicious! Best loaf I have ever made! Prep time really is pretty long though, next time I will do double and freeze half. Try it, you'll like it :)
