Lime-Curry Tofu Stir-Fry

Delicious. I did substitute fish sauce for the soy sauce. This was the first time I had used fish sauce, and I think it made a huge difference in the flavor of the curry. Other than that, I didn't change much. I thought the basil was a little heavy, but the hubby disagreed and said he wanted more, so I guess this was a good compromise. Will be making this again.

White Bean, Spinach, and Barley Stew

I thought this was fantastic...with some modifications. The barley definitely needs to cook for 45 minutes. I added extra garlic and wine, oregano, basil, more red pepper and a dash of cajun seasoning. I also added a lot of chicken broth to make it more soup like. This was a big hit with the friends I had over.

Turkish Fish Stew

This was fantastic. The taste is completely unique. It needs to be recipe of the day so more people can try it. I didn't have ginger or sumac on hand, so I'm not sure what those add. Personally, I would cut down on the lemon juice or not include it at all. Otherwise, excellent!

Calypso Black Bean Soup

Husband thought this was better than average, I thought it was GREAT. I used 3 cans of black beans and 4 cloves of garlic, and only 3/4 banana. I also used chicken broth instead of veggie broth because I was out. Turned out perfect. Next time I might throw some cilantro on there.

Cajun Style Stuffed Peppers

Fantastic! I cooked the rice beforehand, so I cut out the chicken broth. I don't eat red meat, so I substituted a vegetarian spicy sausage for the Andouille. I added more Cajun seasoning, some finely chopped jalapeno peppers, and topped with mozzarella. Delicious - one of my new favorites.

Quinoa with Veggies

Great! Tasty and easy. This is one of those recipes you can play with. We didn't have regular corn on hand, so we used baby corn. Also added mushrooms, sesame seeds, red pepper flakes. And used chicken broth (2 cups) to cook the quinoa.

Shrimp with Tomatoes and Feta Cheese

This was delicious - even though I forgot the feta, heh (was so eager to eat I just forgot to put it in). I also only used 1 lb of shrimp - that was deliberate - and it was plenty. Very good and simple, though the prep takes some time. Will be making again.

Couscous Royale

This was very good. I used 1 lb. chicken breasts and no sausage. Couldn't find harissa anywhere, so skipped it, and subbed a parsnip for the rutabaga - which I didn't really like. The flavor is great, though. I upped the turmeric and cayenne a bit.

This was good, but would be much better if the sauce were made from scratch. Store-bought sauce always tastes too sweet. I'm not sure the egg added much either. But was still tasty.

Cheese Ravioli with Three Pepper Topping

Great recipe base, but it did need a few modifications. I took some of the other reviewers' suggestions and sauteed garlic with the onions and bell peppers, then added 1/2 tsp of oregano and 1/2 tsp basil with HALF the amount of broth. I added a splash of white wine and a splash of cream. I doubled the amount of red pepper flakes, per the advice of others - I would NOT do this again. I think the amount called for in the recipe is probably fine. Next time I think I'll add even more cream than I did.

Byrdhouse Mushroom Barley Pilaf

Not a fan of this. The flavor wasn't that impressive - and I even used fresh basil instead of dried. Worse, it burned in the oven even though I had it in for less than 45.

Though easy to make, did not like this at all. The massive amount of dried herbs gives it a weird texture (maybe better with fresh?) - and yet despite the herbs, the flavor wasn't good.

Cajun Appetizer Meatballs

These are FANTASTIC. I made them with turkey in the oven and then kept them in the slow cooker for my holiday party. Everyone raved. I had to stop the early guests from eating all of them before the other guests arrived. Great. Will make these on a regular basis.

Fantastic. I took the advice of others and added 1/4 c. wine, a dash of Worcestshire, and okra. My husband said it was perfect - and he doesn't even like shrimp all that much.

Cajun Chicken Pasta

I'm really surprised at the number of positive reviews for this. The husband and I thought it was terrible. For one, the timing was off. Cooking the chicken first and then adding the veggies for a few minutes resulted in overdone chicken and underdone veggies. It also could have used more pasta for the amount of sauce. Both of these could easily be adjusted, though. The real issue was the sauce. It was so plain! Cream with some dried seasoning - that's it. No layers to it at all. Won't be making this again.
