Slow Cooker Chicken and Dumplings

I had problems with the biscuits. Next time I'll take the advice of other reviewers and put the biscuits on top and bake in the oven.

Slow Cooker Chicken Stroganoff

I don't eat red meat but sometimes crave the dishes from my childhood which had it, like beef stroganoff. This is a perfect substitute. And soooooo easy to make.

Black-Eyed Peas 'N' Pasta

This is (obviously) a real departure from your average pasta dish. Could be a little hotter, but otherwise pretty good. Will probably make again for the change in pace.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Ehh...Tasted like many other mushroom-based pasta sauces. I agree with the other comments stating that this was a waste of boursin. If I ever make it again, I'll just use veggie cream cheese.

Cajun Appetizer Meatballs

These are FANTASTIC. I made them with turkey in the oven and then kept them in the slow cooker for my holiday party. Everyone raved. I had to stop the early guests from eating all of them before the other guests arrived. Great. Will make these on a regular basis.

Coconut Shrimp I

I pan-fried these. You wouldn't think that the coconut would stay on, but it does. These were served at a holiday party and everyone commented on how un-shrimplike they tasted - and how delicious.

Oven Baked Jambalaya

This was the first time I made jambalaya. It's a decent recipe and certainly a good base to start from if you want to play around with it. I found that I had to raise the temp to 375 for about 30 minutes at the end to get the rice to cook - it really has to be boiling. Good as it is, I think I'll try a few others.

The Best Vegetarian Chili in the World

Great chili recipe! The only thing I ever change is the amount of oregano - only 1 tbs. - and chili powder - I think it tastes terrible with 1/4 c. 1/8 is plenty. 1 28 oz. can of crushed tomatoes and 56 oz. of diced works, too. But these are minor changes. Overall, the flavor is excellent.

Spicy Shrimp Creole

Fantastic. I took the advice of others and added 1/4 c. wine, a dash of Worcestshire, and okra. My husband said it was perfect - and he doesn't even like shrimp all that much.

Very good and easy to make. However, I found it to be a little too thin for my taste. Next time I'll probably reduce the water (or the broth) down by a cup.

Lentil Soup

This was very good. Although, I did follow another commenter's suggestion and added a 28 oz. can of crushed tomatoes, substituting some of the water for tomatoes; I thought this made it a little too tomato-y. I also doubled the amount of spinach, which turned out well. Overall, great recipe!
