Broccoli and Cauliflower Casserole

Cajun Style Stuffed Peppers

Fantastic! I cooked the rice beforehand, so I cut out the chicken broth. I don't eat red meat, so I substituted a vegetarian spicy sausage for the Andouille. I added more Cajun seasoning, some finely chopped jalapeno peppers, and topped with mozzarella. Delicious - one of my new favorites.

Garlic Salmon

Zucchini Alfredo

I thought this was just okay. I added mushrooms and doubled the garlic. The zucchini was barely noticeable. It tasted like a cross between a regular alfredo dish and a pesto pasta. Also, I think 8 oz. of noodles would be plenty.

Spicy Chipotle Turkey Burgers

These were really tasty. I used two peppers, but didn't think it made it too spicy at all. I also threw some mozzarella into the mixture. I can't say I was as wowed as some of the other reviewers, but will definitely make again.

Butter Chickpea Curry

This was great. Lots of flavor and easy to make. I substituted a can of diced tomatoes and some tomato sauce for the tomato soup, used two potatoes and cauliflower instead of four potatoes, and added 1 tsp. cayenne and green thai curry paste. It actually could have been spicier, but was still fantastic.

White Bean, Spinach, and Barley Stew

I thought this was fantastic...with some modifications. The barley definitely needs to cook for 45 minutes. I added extra garlic and wine, oregano, basil, more red pepper and a dash of cajun seasoning. I also added a lot of chicken broth to make it more soup like. This was a big hit with the friends I had over.

Feta Cheese Turkey Burgers

Very good. I was hesitant about using the olives, but they weren't overpowering at all. I think next time I'll add more feta and olives. I did add an 1 egg and 1/3 c. bread crumbs.

This was fantastic - the best recipe I've found on this site. I did add red pepper and might try mushrooms next time. I also didn't use the full amount of cheese, but it was still superb.

Greek Pasta with Tomatoes and White Beans

I sauteed some onion and garlic in olive oil and added 1 tsp basil and 1 tsp oregano and a dash of crushed red pepper. I also mixed the feta in with the pasta. Tasty and unusual. Would normally rate it a 4, taste-wise, but it was so easy to make I bumped the rating up.

Chicken Enchiladas V

I made this with fake soy-based chicken and it was a great vegetarian dish. Per others' suggestions, I took a half can of enchilada sauce, a can of diced green peppers, half a container of light sour cream, and a little cayenne pepper and cumin in another bowl, then stirred half of it into the fake chicken. This went into 8 corn tortillas.

I thought these were delicious. I omitted the apple and raisins, because I'm just not a fan of fruity flavors in dinner meals. Had it with brussel sprouts and was surprised at how full I felt after just one.

Baingan Bharta (Eggplant Curry)

I was excited to dry this, but was disappointed with the result. Contrary to what others have said, I thought the flavor was great, though I would turn up the heat a little bit with another jalapeno pepper. The problem was that the sauce was waaaay too thin, practically non-existent. This was bad enough, but it also meant that when I turned the heat on high, I had a difficult time keeping it from burning. After I made it, I checked other recipes for the same dish online. Most of those call for at least TWO, usually FOUR tomatoes, not ONE. This would have made a huge difference.

Cajun Seafood Pasta

Per others' suggestions, I sauteed the scallops and shrimp in cajun seasoning and garlic and added them to the sauce at the very end. I also used dried herbs instead of fresh, and I'm not sure if my calculations were off or not, but it was a little too "herby." Next time I'll use fresh. Finally, it was just a little too hot, I think largely because of too much black pepper. I'll scale it down next time. But essentially a very good recipe.

Cheese Ravioli with Three Pepper Topping

Great recipe base, but it did need a few modifications. I took some of the other reviewers' suggestions and sauteed garlic with the onions and bell peppers, then added 1/2 tsp of oregano and 1/2 tsp basil with HALF the amount of broth. I added a splash of white wine and a splash of cream. I doubled the amount of red pepper flakes, per the advice of others - I would NOT do this again. I think the amount called for in the recipe is probably fine. Next time I think I'll add even more cream than I did.
