Couscous Royale

This was very good. I used 1 lb. chicken breasts and no sausage. Couldn't find harissa anywhere, so skipped it, and subbed a parsnip for the rutabaga - which I didn't really like. The flavor is great, though. I upped the turmeric and cayenne a bit.

Puttanesca I

Unbelievable Spinach Calzones

Okay. I made them with pizza dough and added crushed red pepper. They were satisfying and fairly no-hassle to prepare, so I'll probably make them again, but may try adding some more ingredients next time. Seems like a recipe kids would love.

No-Cream Pasta Primavera

This was fantastic. I added diced tomatoes in place of the grape, cut the balsamic down to 1 tbs., and added feta. This one will stay in rotation.

Spaghetti Carbonara II

I did not care for this. It was a somewhat dry and sticky and had little nuance to the flavor - the onion was overpowering. I like the idea of Carbonara, but will be looking for another recipe.

Black-Eyed Pea Gumbo

Delicious. I've made this a few times and the recipe always changes because you can throw just about anything in here. This time I added: Worcestershire sauce, tabasco, jalapenos, cayenne, parsley, thyme, 2 bay leaves, and 1 cup okra. I think this might be a new year's tradition from now on.

Roasted Red Pepper and Potato Soup

The recipe as it stands needs work. My largest complaint is that it's way too thin. Additionally, the red peppers aren't that noticeable. (It looks nothing like the picture that's up, by the way - it's not pink at all.) I'm going to try it again, but in the future, I'll use two potatoes, double the roasted red peppers, and cut the chicken broth by a third or maybe even a half.

Chipotle Shrimp Tacos

Yowza! Really, really hot - but I did marinate the shrimp in chipotle sauce for an hour AND included the minced chipotle peppers. I think next time I'll leave one or the other out. Regardless, I still thought these were fantastic. My only real complaint is that the tacos were a little bare, even with the sour cream I added. I think next time I'll include either guacamole or some type of lettuce or slaw. Don't let the heat scare you off - really tasty!

Lentils and Rice with Fried Onions (Mujadarrah)

Sauce Rosee

A good base sauce. I had fresh basil on hand, so I used that instead of dried. I only used 3 tbs. of oil and half and half instead of heavy cream. Added 1/4 c. parmesan cheese. The only thing I would change is to use 1/4 c. of wine next time. I added the amount recommended (1/2 c.) before the tomato sauce and boiled some off, but it was still too wine-y. All in all, a good recipe to experiment with.

Lime-Curry Tofu Stir-fry

Delicious. I did substitute fish sauce for the soy sauce. This was the first time I had used fish sauce, and I think it made a huge difference in the flavor of the curry. Other than that, I didn't change much. I thought the basil was a little heavy, but the hubby disagreed and said he wanted more, so I guess this was a good compromise. Will be making this again.

Spicy African Yam Soup

This was fantastic. The only thing I changed was to add 1/2 tsp. red pepper flakes and a dash of cayenne pepper. I also added just a bit more peanut butter. Delicious. This will be in heavy rotation.
