sadly, no one liked these. They looked cute, but as my friend said, they're not worth the calories. Even my kids just picked the kisses off the top and left the cookie. Sorry....

Beet Surprise Cake

Very moist. My husband, the beet lover, loved this! The kids didn't even finish their one piece though, except of course, the frosting. I'll make it again, probably, since my husband liked it, but for me, I'll stick to a cake where nothing competes with the chocolate flavor.

Broiled Tilapia Parmesan

I've only made this twice so far, but wow! I skip the celery salt (used garlic salt instead) and use Key Lime lemon juice to add a little "kick". Tastes good with a little Old Bay Seasoning too. Thanks!

good recipe, and smells SO good when it's cooking! I've done various substitutions - used whole wheat pastry flour, applesauce for the oil, stevia for the sugar, added cinnamon, added protien powder... all turn out just fine. Thanks!

Downeast Maine Pumpkin Bread

Super! I've used both canned & fresh, roasted, then pureed pumpkin. I've tried it as bread, muffins & minimuffins - all are great. My husband used the word extraordinary when I asked how he liked it. I've made this several times just as muffins & minimuffins - easier for little hands (and big ones) to handle.

Penne with Red Pepper Sauce and Broccoli

Love this one! My mother didn't like it, but she doesn't really like vegetables much. It was neat to have a non-tomato red sauce. My meat-loving husband said this is one of the few meatless dishes I make where he doesn't miss the meat. This one's a keeper for us! Thanks!

Penne a la Vodka II

Very good, but the sauce was a bit thin, didn't stick as well as I had hoped to the penne. Could have been me, though! I used 1/2 and 1/2 as other reviewers had suggested, and used those gourmet tomatoes stewed in tomato puree and basil. Next time, I'll use the tomatoes I can drain & see if that helps thicken it up. Otherwise, I'll thicken with parmesan cheese. Definitely will try this one again!

Simple Spinach Lasagna

Great stuff! I prefer coarsely chopping a 20 oz bag of fresh spinach, makes the lasagne look better. Also chopped up a package of firm tofu and substituted it for half the cottage cheese. Does take about an hour to make (a long time for ME!), but worth it! You're making it easy for us to do "meatless nights" at our house. Thanks!

Brown Rice, Broccoli, Cheese and Walnut Surprise

We've just started trying to eat less meat, and as avid carnivores, we had pretty low expectations of being able to do that. But this really yummy! I took another reviewer's advice and added about 1/2 cup of lentils to the brown rice while I cooked it, to make it more filling. I never even liked broccoli before, and now we eat this nearly every week! Thanks so much!
