Bean Soup With Kale

This soup is the bomb!! It's so flavorful and filling. I do make a few modifications though. I use three cans of white beans: Cannellini, Navy and Great White Northern Beans. I also add cut carrots, two cups of cooked brown rice and extra broth. It freezes really well and is definitely a new favorite on my rotation!

Black Bean And Corn Salad I

Delicious!!! I used this recipe as a template and modified to taste. I only used a pinch of cayenne pepper and cumin. I didnt have balsamic vinegarette so I just used balsamic vinegar and I doubled the cilantro. I also skipped the bell pepper because I'm not a fan. Adding tomatoes is a must!! I would have included avacado, but there weren't any ripe ones at the grocery store. This recipe is hard to mess up and is sooo tasty!!

Gourmet Chicken Salad

I liked this recipe, but made a few changes that worked really well. I added cucumbers and crasins. Instead of plain almond, I used ranch flavored salad topper alamonds and mayo instead of the cucumber dressing. Very tasty!
