Homemade Wine Coolers

Great summer drink! Definitely one of my new all time favorites. Its is not too strong. I now keep an extra ice cube tray in the freezer with wine in it so I can have this whenever its hot out. I made it with both red and white wine. I preferred the red wine but hubby preffered the white. Great way to get rid of the so-so wine someone gave you for xmas. The only thing extra I did was a squirt of lemon juice. Really made a big difference.

Sophie's Zucchini Bread

It was OK. Nothing fantastic. I thought the cinnamon was really strong, and it was really all you tasted. My hubby liked it but even he said it was far from the best he had ever had. I won't make it again.

Mandarin Orange Cake II

i have made this cake several times, although i make a frosting combining instant vanilla pudding made according to the packages directions, a tub of whipped topping, and a can of drained crushed pineapple. it goes really well with this rich, moist, and dense cake.

Pear Pie III

This was a little too sweet when I made it the first time. I liked the general idea though, and the next time I tried it I reduced the sugar, and instead of pears put mixed berries in the pie crust, including blueberries, raspberries, and quartered strawberries. It came out absolutely delicious.

Easy Peach Cobbler II

I had doubts about the bread at first, but I needed a dessert really quickly and had almost no flour so this fit the bill. It is really fantastic. A little too sweet the first time I made it, so now I reduce the sugar, I cube the bread and toss it with the sugar and egg and all that, and I had a little cinnamon or apple or pumpkin pie spice, whichever I have on hand. I have never used self rising flour in this recipe though, I usually just a pinch of baking powder to the flour and it works fine. I awesome quick little recipe that I now always keep everything on hand for.

Classic Banana Bread

This is a nice light, airy banana bread. I omitted the walnuts and added a half a teaspoon of apple pie spice. I used regular fat sour scream because it was what I had on hand. Took the whole hour to bake, and a little more. All in all a good recipe, although I would prefer a denser texture.
