Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Sorry Ken...I know you are insisting on the timing of this thing, but 14 minutes wasn't long enough in this higher elevation. We ended up with soft boiled eggs. A disappointment on Easter, but they did peel rather cleanly, and there wasn't a green ring around the outside of the yoke, so I gave it four stars. I'll try again with a longer cooking time.

Slow Cooker Tapioca Pudding

Sweet Potato Gnocchi

Very, very good. I used pumpkin instead of sweet potato because my 9 month old has a sweet potato intolerance. His stomach just won't keep them down. I can only imagine what it is like with sweet potato. I used a decorators tip and disposable pastry bag, which made clean up very easy and the execution of this recipe much neater. I served this with alfredo sauce and oven baked italian chicken. We will be making this again.

Strawberry Oatmeal Breakfast Smoothie

I only had a seven grain oatmeal, so I think that the texture was a little grainy because of the sunflower seeds, but otherwise a very filling and yummy smoothie!

Pumpkin Pancakes

These are very filling. I would add more cinnamon and leave out the allspice next time. We really enjoyed these, and ended up skipping lunch because we still weren't hungry! I suspect this would be a good breakfast for teenagers or kids in school.

Caramelized Baked Chicken

Very good. I used the tip from another reviewer to make this with boneless skinless chicken breasts. Next time I think I'll add some cornstarch...it was still pretty runny. Went good over ginger rice.

Marshmallow Fondant

The flavor of this is worlds better than any other fondant I have tried to use. It is easy to roll out once you get it to the right consistancy...That was tricky for me. I used three tablespoons water plus some vanilla, but I think next time I will keep the one more tablespoon water. It's dry here, and I had to use a ton of crisco to make this workable the next day.

Chili Chicken

Amazing flavor. We don't have a grill, but we have a foreman. I tried to cook the drumsticks on that, but it didn't cook all the way through and started to really carmelize (okay, burn). I took them off the foreman and popped them in the oven for another 25 minutes, and they came out perfect. I hate chicken on the bone, but I loved this.

Spicy Smoky Macaroni and Cheese with Turkey Bacon

Wow. This is so cheesy rich, I feel guilty for giving it five stars. I feel like I shouldn't LIKE it so much! Didn't do the bacon and replaced smoked paprika with normal paprika because I didn't have any smoked on hand. It was delish. Perfectly spicy. Mmmm.

Tender Italian Baked Chicken

Very good taste. I added additional spices to the mayo mix and also to the bread crumbs. Used basil, thyme, and paprika in the mayo, with some garlic, oregano, and more basil, thyme, and paprika in the crumbs. The only reason I gave this four stars is because it was a soggy mess on the bottom. I even flipped the pieces over halfway through cooking time. Next time I will take the advice of another reviewer and bake on a metal rack.

Jalapeno Chicken II

The flavor of this was excellent. The only thing I wish was better was the jalapenos...they were really crunchy and hard to cut. My chicken was done, so if I had cooked it any longer it would have been dry. Next time I think I will blanch them, or even use the jar kind.

Chicken Satay

I cooked the chicken on the stovetop with the marinade and served with spiced rice. It was pretty good. I thought it was missing something, but it may be because of my cooking method. The marinade was pretty sour IMO...I'm not a huge fan of lemon juice, so next time I think I will decrease it a bit. I will make this again with some modifications.

Janet's Rich Banana Bread

Mashed the bananas and mixed them with the sour cream. Added some cinnamon. We made mini loaves to give away as gifts for Christmas. Baked at 350 for 30 minutes and they were perfect. UPDATE: Made them with oil instead of butter, and 1/2 teaspoon maple extract in addition to the vanilla. Delicious both ways.

Cheddar Chicken Spaghetti

After my adjustments, this is a five star recipe. I cut the recipe in half since there are only two of us, but I still used a full can of cream of chicken with less milk. I added some crushed red pepper, garlic powder, and broccoli to the soup mixture. The broccoli solved the aesthetic problem, adding some bulk and color. The crushed red pepper and garlic spiced it up just enough for our tastes. I accidentally used cooked turkey instead of chicken (since I had both in the freezer) but I actually loved it. I will try it with chicken next time, but I don't know if the turkey can be beat.

Easy Honey Mustard Mozzarella Chicken

Very good. Mixed the honey and the mustard and spread evenly over the chicken. Sprinkled with chopped, pre-cooked bacon and then covered with cheese.
